Baja Grain Bowls

Meet my new favorite lunch. Making this dish is a little more effort than I usually put in for lunch, but trust me when I say it’s worth it. It’s absolutely delicious. The combo of ingredients, the dressing, all of it together is one of the tastiest things I’ve ever had. My husband doesn’t like quinoa and doesn’t go out of his way to eat avocado, but said smelling this got him hungry when I was cooking this up. I have made a semi-homemade version using precooked chicken cutlets but I don’t really count that. So here we are with a new recipe, unlike anything you’ve seen before on the blog. Chicken parmesan is not hard to make but it does have a number of steps. The time is worth it for this recipe. The chicken has a crispy crust and is tender on the inside. It’s simple …

Slow Cooker Taco Chicken Chili

Chili season is in full swing and I’ve got a new recipe for you. I don’t use a slow cooker often and by that I mean that we use it for one recipe, pea soup. So I’m trying to use it more for other recipes, which is where this taco chicken chili recipes comes in. The best part about this chili is that you don’t have to touch raw chicken. You put it, along with all of the other ingredients into your slow cooker and let it do the dirty work. I love that this chili option has chicken instead …
