Sheet Pan Garlic Parmesan Chicken and Potatoes

I’ve got a quick and easy chicken dinner recipe for you. Bonus, it all cooks on one pan. This chicken is a little different than the ones I’ve been sharing lately. This has a crunchy parmesan and herby coating. It’s so yummy. Let’s not forget those potato wedges, which are also covered in parmesan cheese and herbs. I added some steamed broccoli because I’m trying to be a good monkey and have vegetables with every meal. This honey mustard aioli was a last minute addition to the party, but boy I’m glad I did. Mini Cheesecake

9 years and 827 posts later… Somewhere along the way I realized that I marked each blog-iversary with a recipe that has chocolate in it… coffee chocolate chip cookie bars, chocolate chip doughnuts, single serving whole wheat chocolate chip cookie, chocolate cupcakes for two, banana bread doughnuts with chocolate glaze, warm chocolate fudge cakes, chocolate chip black and white cookies, then chocolate lava cakes. Baked Ziti

When I think of comfort food, pasta is at the top of my list. I’ve made this baked ziti so many times over the past few years. This recipe will work with normal size chicken breasts, but then you won’t get that perfect ratio of tender chicken to crispy coating. So if you want what you see here then you will need a tenderizer or kitchen mallet to pound …

Simple Chickpea Salad

Simple is the name of the game today. Speaking of games, I’m excited for the big football game this Sunday. I’m not rooting for a particular team this year but I love the fun food that goes along with the celebration. Although, this year the game falls on the day before Valentine’s Day. So do we make football food or a romantic dinner for two or a combination of both? I’m still working on that answer, but in the mean time, let me bring your attention to this chickpea salad. This salad is super simple and tasty. It’s a good …
