Guys, this chicken is ridiculously delicious. If you know me or you have been following me here on Tina’s Chic Corner for a while, then you know that I’m not the biggest fan of chicken. Over the past few months I’ve challenged myself to find tasty chicken recipes that are “Tina friendly.” Basically, that means that the recipe must meet my high standards (and that isn’t easy, my friends). As part of this pattern I’ve also been enjoying a lot of “Buffalo” flavored things. Here enters this spicy chicken. I enjoyed it for lunch AND dinner… in the same day! …

Creamy Cucumber Salad
Fresh and tasty salads can be hard to come by in the cold months, but I can almost always count on cucumbers. I was drawn to this cucumber salad because it reminds me of tzatziki – cucumber yogurt dip, which I love. You’ve got a lot of similar flavors, Greek yogurt, olive oil, lemon juice, dill, salt and pepper. However, there is no garlic here. So if you’re not a garlic fan (hi, mom), then this is the perfect alternative. You can enjoy this cucumber with a lot of foods, like pork chops and rice, or chicken and potatoes. You …
Beef Stew
We’re due to get a big snow storm this weekend. Welcome to New England in the winter. In anticipation of the snow days, I’m laying in all the cozy supplies. Warm blankets, cozy sweatpants, candles, new books, wood for the fireplace, and ingredients to cook up some comfort food, like this beef stew. This stew is so easy to make and delicious. We don’t make a lot of stews so I’m always amazed how easy they are. They may take some time to cook but that’s no big deal, especially when you have nothing but time on a snow day. …
Mashed Sweet Potatoes
Valentine’s Day is right around the corner and I’ve already got the wheels turning on what I want for dinner (and more importantly, dessert). Sometimes my husband and I like to have “fancy” meals on special occasions. You know, something that you might have at a restaurant and wouldn’t usually make at home. For us that tends to be something like a nice rib eye steak with a couple of sides and a decadent dessert. The two of us enjoy being in the kitchen together so the quality time is an added benefit to staying home and making a fun …
Cheddar Drop Biscuits
Cheddar. Biscuit. Need I say more? Well, I’ll say a few words. These biscuits are loaded with a lot of cheddar cheese. A lot. So if you’re a cheese fan then you will love these. My husband and I enjoyed these with beef stew (stay tuned for that recipe) last weekend. Add in a glass of beer and it was the perfect meal for a cold winter day. This recipe did not come with a photo in the cookbook, which is a pet peeve of mine, but I went with it anyway. I had no idea what to expect but …
