Pumpkin Muffins

These muffins are autumn in a little cake. I’ve been on a muffin kick lately. I’ll buy one or two from our local grocery store on the weekend as a treat. It’s not exactly the healthiest of habits to have, but it sure does make me happy to have a tasty muffin and coffee for breakfast. My husband says that muffins are not a breakfast food because they are cupcakes without icing. He’s not wrong, but I’m also perfectly fine with having cupcakes for breakfast. 🙂 I decided to bake some muffins instead of buying them and thought pumpkin ones …

Butternut Squash Soup

Yup, it’s definitely soup season in our home. It’s getting cold out and I’m craving warm comfort foods. A couple of weeks ago my husband and I made our favorite split pea soup. It’s a staple every fall/winter. Last weekend I wanted to try something new. I’ve been wanting to try a butternut squash soup, but have you seen how many different recipes are out there? Spinach and Rice

Can green colored food look appetizing? Maybe it’s a food blogger’s dilemma. I’m always looking for side dish recipes, especially ones that aren’t high maintenance. I’ll spend time on prepping the main part of the dinner or the dessert ( 😉 ) but by the time I get to the side dishes I have no time to spare. So let’s just say that the side dishes always get the short end of the stick in my kitchen. While this spinach and rice dish might not look like much in photos, I think it could be the recipe that you reach …

Tortellini Salad

Happy October! Even though we’re entering into stew and soup season, I wanted to share a salad recipe. I figure there’s plenty of time for soups and stews. This is the kind of salad that you can make 365 days a year because the ingredients are available all year long. (If you can’t find basil then you can use other fresh herbs that are available.) This is easy and fast to whip up and it’s a great make ahead meal. Fall is my absolute favorite time of the year and I have lots of things on my to do list. …
