Lighter Roasted Red Pepper Pasta

Mondays… They’re the pits.  Will a quick and easy recipe make it easier to handle?  One can hope. I love, love, love my Roasted Red Pepper Pasta and my husband says that it’s one of the best things that I’ve ever made.  (Thanks, babe!)  I’ve made it a handful of times, but I don’t make it as often as I’d like to because it’s not exactly what you’d call healthy eats.  The sauce in the original recipe contains a half a cup of heavy cream.  It sure is tasty and if you’re not counting calories then go for it.  If you are …

Rosemary Bread

My husband has made this bread five or six times now and I’ve never managed to stop eating it long enough to take pictures of it.  That ends here.  🙂 Have you ever remembered a particular restaurant because they served you the most amazing complimentary bread ever?  This bread reminds me of something that I’ve had at a fancy restaurant.  The best part about making this bread is that you don’t have to get dressed up to enjoy it.  (And in this case, that my husband was actually the one to make it, even better!) There’s nothing worse than eating …

Genuine Greek Salad

What do you cook when it’s hot and super humid out and you’re lazy?  I eat a bowl of cereal or whip up a quick salad. I’m pretty sure a blog post about how to make a bowl of cereal wouldn’t go over very well, so I figure a salad recipe is a better thing to share with you.  By the way, in case you’re curious, I’m into Grape-Nuts cereal lately (still not going to tell you how to put milk in the bowl though).  😉 The other day my husband and I had a conversation about Greek salads.  When we went to …

Vanilla Butter Cookies

What better way to say thank you to someone than with cookies and coffee? The other day I mentioned to you that my best friend and her family were coming up for a visit and that my parents were also coming over at some point to help build some shelves for my shoe closet.  Well, things didn’t go exactly as I had planned.  (I can hear my husband say that that’s why I shouldn’t plan so much.) My friend’s daughter came down with the flu so we postponed their visit.  Now I’ve got a lot of leftover Fudgy Brownies.  I know, that’s a real problem.  😉  Thank goodness …

Corn Guacamole

This is my first time making guacamole.  Holy guacamole…  I bet that’s the first time you’ve ever heard that one.  😉 I buy plenty of avocados.  I patiently wait for them to ripen.  (Patiently…  lol…  I’m funny.)  Then I cut them open and… eat them immediately with a little salt and pepper.  Yup, the simple truth is that we can never keep them around long enough for me to do anything fun with them.  Can you blame me?  Avocado, salt, and pepper…  it’s so silly simple but so darn delicious. Well, that ends right here, right now.  I’m turning yummy avocado …
