Butternut Squash Soup

What is your ideal Fall day? This butternut squash soup is remarkably similar to the Panera version. If you’ve never had Panera’s butternut squash soup (or aren’t even familiar with the Panera food chain), this is a sweet creamy squash soup with warm spices. I like to add something on top of the soup, for texture, like pistachios. Let’s not forget to add bread of any kind to this party. My perfect Fall day starts with a coffee date with my husband, of course I will have a pumpkin spice latte. Then stroll around a small New England town or …

Moroccan Style Chickpea Soup

I’ve been eyeing the The Complete Mediterranean Cookbook for a while and my husband surprised me with it the other day.  I was so excited to try a recipe that I made something the very next day. Since it’s January in CT, it’s only fitting that I try a soup recipe first.  Ironically, it was in the 60’s this past weekend, which is an actual heat wave for this time of the year.  Nonetheless, we still enjoyed eating this soup. It’s not the prettiest bowl of food, but then again, I find that most soups don’t necessarily look as good …

Chicken Rice Soup (Soupa Avgolemono)

This soup is a nostalgic one for me because my mom used to make it all the time when I was a kid (and she still makes her own version). My mom’s recipe for chicken soup goes something like “add a little bit of this and a lot of that.” Her soup is delicious, but I like to follow a recipe that has exact measurements. So I turned to the internet to try to find one that resembled my mom’s. That’s a tall order but it turns out that I was successful with this recipe. While this is called “chicken …
