Homemade Chipwich

When I was a kid my family and I used vacation in Lake George, NY.  For one week, almost every year, our life was all about miniature golf, pool time, and cheesy shops on the main drag down town.  We especially looked forward to visiting a bakery that sold chipwiches.  They were huge and delicious!  Sadly, the bakery closed a bunch of years back cutting off our supply.  No more chipwiches!  We were so disappointed.  It’s been about 10 years since that happened and we still talk about how we miss those infamous chipwiches.

These homemade chipwiches are identical to the ones we fell in love with in Lake George.  There is nothing fancy about them, but they are (to me) the epitome of summer time fun.   Since this upcoming weekend marks the end of summer, I thought it was perfect to end the season with the one last summer time treat.

Chipwich Recipe
(Serves 1)

Ingredients:

  • 1 Perfect Chocolate Chip Cookie or 2 of your favorite chocolate chip cookies
  • about 1/2 cup vanilla ice cream
  • whatever goodies you like to garnish the outside of the vanilla ice cream, like miniature chocolate chips, peanut butter chips, mini M&Ms, or sprinkles

Directions:

  1. If you are using the Perfect Chocolate Chip Cookie (or any other cookie that’s thick) cut it in half in the thickness direction and lay the flat sides facing up.  If you are using a thinner cookie, take 2 cookies and lay them down with the flat sides facing up.
  2. Locate a measuring cup that is a little narrower than your cookies.  Preferably one that is made out of metal.  (You’ll see why metal helps in a moment.)
  3. Fill the measuring cup about half way up with vanilla ice cream.  Pack it in very well with the back of a spoon to eliminate air pockets.
  4. Turn the measuring cup upside down over the bottom cookie and press your hand against the bottom of the measuring cup.  The heat from your hand will make the ice cream release onto the cookie.  If it seems to be stuck, take a knife and circle the inside edge of the measuring cup to help loosen the ice cream.
  5. Once the ice cream is released from the measuring cup, place the top cookie onto the ice cream and freeze it for at 30 to 45 minutes.
  6. Take the ice cream sandwich out of the freezer and garnish the outside of the ice cream with any goodies you like.
  7. Put the ice cream sandwich back in the freezer for at least 2 hours in order for the garnish to set and the ice cream to fully harden again.

Store in a freezer friendly bag or wrap them in plastic wrap and place them in the freezer.

 

When I made a batch of the Perfect Chocolate Chip Cookies, my husband said, “You know what we should do with these?  Make chipwiches!”  Yes!  I seriously hope you’ve made a batch of them because they are awesome!  Perhaps you did and don’t have any left overs.  That’s understandable.  As my husband would say, “make ’em again.”     🙂

If you haven’t made them yet, what are you waiting for?  Use this recipe as a great excuse.  Of course you can use whatever chocolate chip cookie you like (even store bought ones).  Cookie.  Check.  Vanilla ice cream.  Check.

Once you’ve made your chipwich, it’s important to put it in the freezer for a little while.  Ice cream melts fast and the process of assembling the chipwich is enough to make it too runny to decorate with other goodies.  So if you place your goodies around the ice cream edge now they won’t stay on and if your goodies are M&Ms you will end up with a rainbow colored mess.  My husband made a version with M&Ms before he learned the secret of refreezing in the middle.  Let’s just say they looked a bit like a day of finger painting with my nephews.

Once you pull them out of the freezer for decorating your chipwich is technically ready to be gobbled up.  The chipwiches at Lake George had mini chocolate chips along the outer edge of the vanilla ice cream.  These just would not be quite the same without them.  If I’m taking a walk down memory lane then I have to go all the way.     🙂  One of the beauties about making your own chipwich is that you can use whatever goodie you want, like miniature M&Ms, peanut butter chips, or even gummy bears if you want, though they do turn from gummy into something a bit like fruity rock in the freezer.  Basically any small candy that can fit along the sides of the ice cream will do the job.  Speaking of ice cream, you can go crazy and use chocolate or any other flavor you want.     😉

Ice cream is not a good subject matter for photographing.  Note to self:  ice cream in a scooper is not the greatest prop idea.  It really looked pretty at first, but as you can see it melted and dripped through the scooper.

We still head to Lake George in the summer time for a few days, but now it’s a bigger crew (my parents, three sisters, two brothers in law, two nephews, a niece, me, and my husband).  If you’re familiar with my blog you’ve heard me talk about Lake George lately because I made a lot of awesome goodies for our 2013 trip.     🙂
