Soba Noodles

Summer is coming!  It’s starting to get warm out and do you know what that means?  We’ll be looking for some quick meals so we don’t have to slave over a hot stove.  How does a 10 minute meal sound to you?

These soba noodles are covered in a creamy peanut sauce that can be eaten hot, cold, or room temperature.

Soba Noodles Recipe
(1 serving)

Ingredients:

  • 1 tablespoon creamy peanut butter
  • 1 tablespoon honey
  • 1/2 tablespoon soy sauce
  • 1 teaspoon peanut oil
  • 1 teaspoon fresh ground ginger
  • about 3 ounces uncooked soba noodles
  • 1 tablespoon peanuts, chopped
  • 1 teaspoon fresh chives, chopped

Directions:

  1. In a small bowl, microwave the peanut butter until it’s melted.
  2. Stir in the honey, soy sauce, peanut oil, and ground ginger.
  3. Meanwhile, cook the soba noodles according to the directions on the package.
  4. Drain the Soba noodles and toss them into the sauce.
  5. Sprinkle it with the chopped peanuts and chives.

Not everyone has tried soba noodles, but I absolutely love them so I’m going to be a little bit educational for those that haven’t.  You can find them in the Asian or international aisle of most grocery stores.  Soba noodles are a type of noodle often made with buckwheat flour instead of regular wheat flour.  Buckwheat, contrary to the name is not actually wheat at all and is actually gluten-free.  For that reason, some soba noodles are gluten-free, but if you are buying them for someone that requires gluten-free be absolutely sure you read the package.  Not all soba noodles are 100% buckwheat flour and therefore may not be gluten-free.  For example, the brand I bought is made up of 17.5% buckwheat flour and 70% wheat flour.  The mixed kinds are a bit less “earthy-crunchy” (to use my husband’s term) than the 100% buckwheat variety and are obviously not gluten-free.

Soba noodles have a wonderful nutty flavor.  (It even says that on the package.)  The more buckwheat flour that’s in them, the more nutty tasting.  They cook in about 3 minutes.  How cool is that?  It actually took me longer to get the water boiling than it did to cook the noodles.  Lol.

As I always say, it’s all about the sauce and this one is amazingly delicious.  It goes perfect with soba noodles.  I’m seriously in love with this dish.  What’s not to love?

I topped my super quick meal with chopped peanuts and chives.  They add a great crunch factor to every bite.

I actually made this for myself because my husband is not a fan of soba noodles.  I don’t know about you, but if I’m just cooking for myself then… well, it tends to be cereal because I don’t feel like dirtying pots or taking the time to cook something just for lil o me.  This quickie is the perfect go-to recipe for me when it’s dinner for 1.  Simply multiply the servings to the number that you need and it’s still an ideal meal to whip up!

I’ve enjoyed this meal hot and cold, but I prefer to eat it at room temperature.  There’s something about room temperature peanut sauce that I like the best.  Too hot and it just seems weird, too cold and it kinda tries to just become peanut butter again (which comes off thick and pasty), but at room temperature there is a certain magical quality to it.

  6. I love soba noodles and this is a great lunch to bring to work or school as it does not need to be heated up or chilled down. We also used to live in Yokohama and there is nothing like cool soba noodles with special dipping sauce on a hot and steamy day in Japan. Thanks for a lovely memory.

  7. Arhhhh… I am so jealous that Summer is just around the corner for you. Winter is upon us here in Aus, slow cooked hearty meals on the menu for me, but I crave the fresh and tasty summer foods SO much. Love this dish, super quick and crazy tasty too. Soba noodles are the business. I always forget about them, adding to the shopping list right now. 🙂
