Spicy Zucchini Chips

It’s zucchini season!  Do you know what that means?  If you’re an avid Pinterest follower then you know that every other recipe will have zucchini in it.  I love zucchini and I don’t object to the sudden flurry of recipes using this veggie, so I hope you’re not sick of seeing zucchini recipes.  I’m here to add to the fun with these spicy zucchini chips.  They’re not really chips, but I couldn’t think of a better title and just called it close enough. Jalapeno Hummus Stuffed Mushrooms

Making one appetizer is usually pretty easy to do.  Making piles of appetizers and pretending it was an easy way to make a complete meal is a great way to be surprised by how much work they can be to make.  I think they start out innocent enough, but for some reason when you are making multiple kinds the difficulty seems to multiply instead of merely add. Eggplant And Asparagus Stacks

Is everyone in detox mode after overeating over the holidays?  After all, bathing suit season is right around the corner.  It’s been on my mind too and I thought you might feel the same.  I’m kicking the healthy lifestyle into high gear, including some healthy eats, like these eggplant and asparagus stacks. These roasted veggies are stacked with layers of a lemony ricotta cheese and topped with mozzarella cheese. Eggplant And Asparagus Stacks Recipe (About 4 servings) Ingredients: 1 large eggplant 16 asparagus spears (about 1 and 1/2 pounds) 2 tablespoons olive oil 1/8 teaspoon salt 1/8 teaspoon ground black pepper 1 container …
