Pineapple Coconut Smoothie

Yogurt, fruit, and granola… This is what my breakfasts are all about lately. I tend to get sick of eating the same thing over and over again, but when I find something I really love, like pizza, ice cream, cookies, bagels, or a great yogurt combo, then I can eat it every day for long periods of time.  It’s probably not surprising that my “love” list involves mostly unhealthy foods. The pre-packaged yogurt cups with fruit are the bomb digity when you’re feeling lazy and they can easily be thrown into your lunch bag for work.  If I’m feeling ambitious, I’ll …

Baileys Iced Coffee

Are you more excited that Zoolander 2 is coming out next year or that St. Patrick’s Day is tomorrow?  This might sound like a weird comparison but they are in fact two events that I am excited about right now. Last week felt like the longest week ever.  Then in the midst of it my husband showed me the announcement that Derek and Hansel were coming back to the big screen and it totally made my week!  Yes, this means that I love Zoolander.  Should I be embarrassed that I like this movie?  I mean, it’s not exactly an award winning …

Banana Brownies

What do you do when you have ripe bananas that need to be used up quickly?  I instantly think of banana bread or muffins. I love banana bread and muffins, but I’ve made them plenty of times.  I wanted to whip up something different so I decided to give banana brownies a shot.   I’ve never tried bananas or whole wheat flour in my brownies (yup, there’s some whole wheat-y-ness going on here).  This recipe was all sorts of experimental for me.  I wasn’t sure whether or not I’d fall in love with these brownies because I’m so happy with my favorite Fudgy Brownies. I …

Chicken Curry With Potatoes

I mentioned last week that I’m trying to eat more healthy and my idea of eating healthy is a kale meal.  My husband’s idea of delicious and healthy is this chicken Indian dish.  Both great options even though they are very different. To tell you the truth, initially I wasn’t excited about this recipe when I saw it in a cookbook.  (Side note, America’s Test Kitchen: The Best Simple Recipes is one of my favorite cookbooks.)  While I love Indian food, I wasn’t in the mood to eat chicken.  You know me and meat… I could pretty much do with out it.  Give …

Kale With Veggies

I’m in serious need of boot camp right now, guys! I need to go shopping for a new bathing suit and the thought of trying one on (or in my case, a lot more than one) is frightening.  Hello, winter weight gain.  It’s not a shock because I’ve kept more junk food in the house than normal and I have no self control.  (Not a great combo really.)  I’ve stopped buying ice cream and cookies so that’s a good start, right? Now let’s get something straight…  I refuse to go the route of celery and carrots for dinner. Phew, I feel …
