If you’ve been reading my blog lately, then you know that I’m really into making my lunches on Sundays or the night before. Before we know it, we’ll be in the hustle and bustle of the holiday season, which means that life is going to get more hectic. I thought I’d share some of my favorite oldie but goodie recipes that are great lunch options to make ahead of time. For me, that means it reheats well and still tastes delicious or if it’s a cold option that it holds up well in the fridge for some time. My husband’s requirements are that it won’t leak all over the inside of his lunch bag.
Butternut Squash, Kale and Sausage. This dish is so simple but is super tasty.
Salad Pizza. I seriously love everything about this salad. When I’m not feeling the chicken, I use chickpeas instead.
Greek Avocado Salad. Love, love, love this combo.
Slow Cooker Split Pea Soup. We seriously make this soup at least once every year. The key to a make ahead soup is to avoid ones with pasta or rice because they tend to soak up the liquid and get weird.
Whole Wheat Waffles. Yes, sometimes I enjoy breakfast for lunch. I like to wrap the waffles individually and freeze them. In the morning, when I want it for lunch, I take one out of the freezer and toast it, and add cottage cheese and jelly. Yum.
Ham and Cheese Pockets. These certainly are not healthy by any means, but they are a great grab and go lunch, especially for the kids. They can be eaten cold, room temperature, or warmed up in the microwave or toaster oven.
Chili. I know that I just mentioned this chili when I shared some recipes to make for game parties, but it’s really worth sharing again. The recipe makes a huge batch and I freeze it in pre-portioned amounts. It reheats beautifully and conveniently.
