If you’re in a food rut then I’ve got an easy recipe for you.
It’s been a dreary winter and this is about the time of year that I relish the sunshine more than normal. It’s amazing how my mood can instantly improve when the sun is out. I usually try to avoid sunshine in my photos because it’s not always flattering to the food and it can cast hard shadows. I’m sure most of you don’t care or even notice #foodbloggerproblems. However, since I’m relishing in all the sun glow, I thought I’d let my photos do the same today.
Back to the food at hand… My husband told me the other day that he was tired of the dinners that we’ve had on rotation lately. Actually, so am I. I found this recipe for chicken thighs and thought it would be as great a time as any to give it a try. It seemed easy too, which is good because these cold dark days have left me with less energy than usual. The verdict on the new recipe?
This chicken is delicious and it was a welcome change from our usual dinners. The chicken thighs are coated with a mustard garlic honey sauce, which is so fragrant and tasty. I’m not a fan of mustard and this does not taste mustard-y and how that is I’m not sure (magic sauce?). I made it with our favorite broccoli recipe and white rice. This chicken is so versatile and you can pair it with almost any side dishes or even place it on a bed of lettuce for a salad. My husband stuck it on some left over pasta once the extras I’d made for the meal were gone. He said it was just as good.
Oven Baked Chicken Thighs Recipe
(Makes about 4 to 6 servings)
Ingredients:
- 2 pounds chicken thighs (I used chicken thighs with the bone and skin. Skinless, boneless chicken thighs or chicken breasts would work too but you may need to adjust the cooking time accordingly.)
- 1/2 teaspoon pepper
- 1/2 teaspoon salt
- 2 tablespoons oil (I used olive oil.)
- 1 tablespoon whole grain mustard
- 1 tablespoon mustard (I used spicy brown mustard.)
- 1 tablespoon honey
- 4 cloves of garlic, minced
- 1/2 teaspoon red pepper flakes
Directions:
- Preheat the oven to 425 degrees F. Depending on how many chicken pieces come in the package, you will need an 8×8 inch or 9×13 inch oven safe baking dish.
- Season the chicken with salt and pepper and set them aside.
- In a small bowl, whisk together the olive oil, whole grain mustard, mustard, honey, minced garlic, and red pepper flakes.
- Place the seasoned chicken in the oven safe baking dish and pour the mustard sauce all over the chicken thighs.
- Bake them in the preheated oven for about 35 minutes or until the chicken reaches an internal temperature of 165 degrees F.
