Gingerbread Drop Cookies

It doesn’t feel like Christmas until I’ve had some gingerbread cookies and hot chocolate.  (Not necessarily together but I totally recommend it.) Guys, I’m super duper excited to share these cookies with you!  I have been looking for YEARS for a good gingerbread cookie that doesn’t require a rolling pin and I’ve finally found it! I love gingerbread man cookies but I have issues with rolling cookies.  Maybe it’s the perfectionist in me that feels like I never seem to roll them all to the right size and thickness.  There’s got to be an easier way to satisfy my gingerbread craving without …

Mini Spinach Patties

Lately, it feels like my life is all about cookies and appetizers. Cookies, cookies, cookies.  I’ve been baking them since before Halloween and quite frankly I’m getting a little tired of it (which I say as there is another tray of cookies in the oven).  I feel like I never have enough to hand out to friends and family so I pretty much just keep baking until December 25th (even if my husband is telling me that we have no more room in the freezer). Well, now it’s all about the appetizers (which is bit of a welcome break from baking).  This …

Chocolate Crinkle Cookies

No Christmas is complete without crinkled cookies. Can you believe this is the first year that I’ve ever made a crinkle cookie?  I’m stunned.  I’ve made about a bazillion cookies and the crinkly ones never seemed to make the cut.  I’ve been missing out.  No mas. First of all these cookies are mad easy to make.  I don’t know about you but I could do with a little easy in my life, especially this time of the year and also especially when I’ve been making more complicated cookies. These are beautifully covered in my precious (aka powdered sugar) so of …

Home for the Holidays

Are you gearing up for the holidays?  I’ve been busy baking cookies (tons and tons), but I thought I’d pause for a moment to share what it looks like in our home for Christmas.  Some decorations are new and some are from last Christmas (or past years). This year marks the third year in our home.  Every  year my husband and I get our tree on Thanksgiving weekend.  That was a tradition that started with my family when I was kid.  Nothing beats that smell of fresh pine.  Every ornament has a memory or story associated with it, even the ones …

Italian Meat Grilled Cheese

How many of you need a Thanksgiving detox, like I do?  Just to avoid being misleading, this delicious sandwich isn’t going to work for that.  Oh well. I love the traditional Thanksgiving foods.  I really do.  But right now I don’t want to have anything to do with them.  After two big family dinners on Thursday and Friday, I’m ready to move on to healthier pastures.  Although I was singing a different tune the other night when I enjoyed some of my mother-in-law’s leftover pumpkin pie. Truth be told, today’s lunch will probably involve lettuce or yogurt or anything that resembles rabbit food.  These …
