Sesame Soba Noodles and Vegetables

Hot days call for 15 minutes recipes because I don’t want to be slaving over a hot oven when it’s 90 degrees F out.  I’m pretty sure I’m not alone here. This past week has probably been the hottest that we’ve had all summer long.  Leave it to Mother Nature to wait until the last minute.  Meanwhile, we’re heading into the unofficial last weekend of the summer and I’m itching for Fall time.  That means come Tuesday I’ll be getting all my cozy sweaters ready, drinking pumpkin spice coffee, and lighting all my fall scented candles.  Eager much?  😉 Have you ever cooked soba …

Curried Chickpea Salad

It’s only Wednesday but I’m already dreaming about the upcoming three day holiday weekend.  Let’s give it up for a long weekends… wahoo! What’s everyone got planned this weekend?  I’m taking advantage of the nice weather and getting together with my family for one last summer BBQ.  Here in CT we can sometimes continue the BBQ season throughout September (or January for the more tenacious carnivores out there), but this weekend unofficially marks the end of summer.  Boo.  As much as I’m looking forward to Fall, I know what soon comes after that… cold, snow, more cold, and more snow. …

Sweet Potato and Cherry Quinoa

Is it Summer?  Is it Fall?  My brain is so confused. We’ve had some cool nights lately where we didn’t even need to put the air conditioner on.  That’s not typical for CT in August.  Should I put my sandals away and starting wearing my new booties?  Maybe that’s the anxious fashionista talking because it’s going to be over 90 degrees F for most of this week.  I think those booties will have to wait. You can see now why I’m confused.  I sort of feel like I need to wear shorts and booties at the same time.  I’m not sure …

Zucchini Bread

Good friends share good things with you. I’ve never made zucchini bread before.  In hindsight that sounds crazy because it seems like an obvious quick bread to turn to this time of the year (or when zucchini is in season).  I turned to the trusty interwebs to look for a recipe and I couldn’t find one that I liked. I mentioned this zucchini bread dilemma to my friend from kickboxing class and she recommended a recipe.  Yup, I take kickboxing class… hiyah.  I might have mentioned it a couple of times here on TCC.  When I started the class I wasn’t sure if …

Cowboy Caviar

Football season is starting soon and I’m excited to have some football food. You know about “football food,” right?  It’s beer, pizza, nachos, dips, chips, and other delicious fattening foods that one typically eats at a game party.  Even if you don’t like sports you’d probably still be willing to go to the party to enjoy the food.  It’s that good.  My contribution to the next game party would be this amazing bean salad. Side bar for a moment…  Can we marvel at my culinary cutting skills for a moment?  It took me FOREVER to cut them all just right.  Okay, maybe not literally forever …
