Avocado Egg Salad

Mayonnaise and I have a strange relationship. Sometimes I’m okay with it, other times it weirds me out completely and I don’t even want to open the jar.  I’ll eat mayo in a salad or on a sandwich if there’s not a lot of it and if it looks appetizing.  Even better if I don’t know it’s even in there, or at least didn’t have to be the one to apply it.  When I do decide it’s a worthy meal additive, I anticipate that I’ll only eat a few bits and skip the rest on my plate but then I proceed …

Overnight Oats

I’m obsessed with oatmeal. I’ve been loving hot oatmeal for breakfast lately.  There’s something so delicious and comforting about it.  It’s warm and hearty and makes a delicious autumn meal.  I prefer the plain kind (I may have gotten this preference from my husband) and then I top it with fruit and cinnamon.  Blueberries are my favorite to add but we’re getting to that time of year when they start to get crazy expensive and they stop tasting good (really a rather bad combo).  Now I’m using raisins instead, and those are perfect all year round. Mexican Style Stuffed Sweet Potato

I’ve been on a kick for finding healthy lunch recipes that I can make ahead of time to bring to work and today’s recipe is a new addition to the rotation. I’m not into eating meat lately, so this is a wonderful vegetarian option. It also happens to be “healthy.”  I use quotations because everyone has their own definition of what’s healthy.  I consider …

Sugar Cookie Bars

I love sugar cookies but I really dislike rolling them out. I’m too much of a perfectionist and I get very frustrated rolling out each cookie to be the same exact thickness.  I have this same complaint about gingerbread cookies too.  My solution is simply avoid cookies that involve this step. These sugar cookie bars are a perfectionist’s dream because there is essentially no perfection required.  I don’t have to fuss at all while making them.  In fact, not only are they easy (and stress free) to make, but you can whip them up quickly with minimal dishes to wash. …

Football Food Recipes

Welcome back football!  If you’re new to my blog then you may not know that I’m a fan of the game.  Yup, I like girly fashion stuff and football.  😉 With the season starting up this week, I thought that I would share some of my favorite food to eat on game days.  Because who doesn’t like pizza and snacks?  Of course, any one of these recipes can be enjoyed any time of the year, not just on a game day.  I’ve even included some never before seen photos.  🙂 Snack food is a must, and I love this Cowboy Caviar.  …
