Tuna and Rice Salad

How does one save time getting ready in the morning? Monday through Friday I feel like I’m rushing in the morning to get everything done on time and out the door for the office.  I’ve been driving to the same office for years, but the traffic has gotten worse.  A couple of months ago I decided to reevaluate my morning routine and revise it to get things done early enough to make it to work on time.  The answer is to plan ahead, prepare, prepare, and prepare some more. The first thing I decided to do was to pick out my outfit …

Tomato and Cucumber Ricotta Toast

Did you see the solar eclipse last week? My husband and I traveled to Nebraska with my father-in-law and his wife to be right near the centerline of the path of the eclipse’s totality (the part where the sun appears to be completely covered by the moon).  We picked a spot near some corn fields (check it out in satellite view mode to see how much corn we were in the middle of), set up our camera and telescope, and busted out our fancy cardboard solar glasses. Corn Guacamole.  Why more places don’t include delicious corn in their guac is beyond me. Cold Sweet Potato Salad.  Everyone …

Tomatoes and Feta with Polenta

Never underestimate a dish built on the foundation of only tomatoes and cheese.  It works for a classic pizza, right? When I don’t have much food in the house and I don’t want to go to the grocery store I tend to get creative with what I do have.  I had tomatoes and feta cheese and not much else.  Truth be told, I could have been happy with these tomatoes, feta cheese, olive oil and herbs on top of some toast for a snack.  However, I remembered that I had some polenta hidden in the back of the cupboard.  Suddenly …
