As some of you may know I took a local kickboxing class for about 3 and 1/2 years.  Sometimes I’d throw in a run or do a DVD workout on TV, but 95% of my workout life for the past few years was all about kicking the crap out of a bag.  I loved it because it was an awesome workout and I made a lot of friends. Mexican Corn and Quinoa Salad

Yesterday’s lunch is today’s post. In fact, since my husband doesn’t like quinoa, the leftovers were today’s lunch too.  I was so excited with anticipation and couldn’t wait for lunch time to roll around.  This salad is that awesome. Stuff I’m Into: Beach Essentials

Here’s a list of my beach side/pool essentials: Sunscreen.  I’m a fanatic when it comes to protecting my skin so I lather up with lots of sunscreen. I’ve been using Banana Boat Sport sunscreen for years and love it because it’s not greasy or “lotion-y” feeling. I also use Aveeno sunscreen for my face.  You can certainly use the Banana Boat on your face but I prefer using something that is specifically designed for the face.  I don’t think that’s strictly necessary.  My husband uses Banana Boat on his face and it works just fine. Triple Berry Pie

Mmm pie.  Do I start all my post about pie that way?  I don’t remember. I have mixed emotions about pies.  I love, love, love to eat them, so let’s set that straight.  However, I’m not necessarily a fan of making them because it’s a bit of a process for me. Summer Salad

Without a doubt my favorite summertime veggie is corn on the cob.
