Shortbread Cookies

Buttery goodness.  Crumbs that melt in your mouth.  Decadent vanilla flavor.  Do I have your attention?  These shortbread cookies may look boring, but they are quite the contrary.  After one bite, these cookies will become one of the most irresistible cookies that you’ve ever had.  To quote my taste tester and husband extraordinaire, “Yea, these don’t suck.”  Which was said while eating several pieces after the one I’d handed him as a taster. Almond Cranberry Granola Poppers

Are these cookies? Are they miniature granola bars?  Call them whatever you want, but I call them amazing!  I love, love, love “things”.  Shocker, I know.  I post a ton of cookie recipes and I’m still on my quest to lose those last darn 10 pounds.  Not the best combo when you think about it.  I wanted to create something that would satisfy a sweet craving and I wouldn’t feel guilty eating it. Toffee Chocolate Chip Cookie Cups

Some cookie recipes require that you chill the dough before you bake them in order to help prevent them from spreading.  What if you really want to make that kind of cookie but you don’t have the time (some require three or four hours, and others are overnight which is even worse)?  Well I suppose you could not bake it and choose something else.  I like my solution better which is to turn them into cookie cups!  Since the cookie bakes inside of a muffin cup there is no way it can spread into thin disks. I needed to bake something …

Soft Frosted Sugar Cookies

100th post!  Holy cow, right!?     😀 I’m on this kick of making huge cookies.  I blame The Perfect Chocolate Chip Cookie that I made recently and of course my husband who has a near religious problem with little cookies.     😉  I’ve made Traditional Sugar Cookies before.  You know, the ones where you roll out the cookie dough and cut out fun shapes.  I love those and while they are “easy” to make, they are quite time consuming and I have to be in the mood for that process.  These still take a while to make thanks to chilling …

Homemade Chipwich

When I was a kid my family and I used vacation in Lake George, NY.  For one week, almost every year, our life was all about miniature golf, pool time, and cheesy shops on the main drag down town.  We especially looked forward to visiting a bakery that sold chipwiches.  They were huge and delicious!  Sadly, the bakery closed a bunch of years back cutting off our supply.  No more chipwiches!  We were so disappointed.  It’s been about 10 years since that happened and we still talk about how we miss those infamous chipwiches. These homemade chipwiches are identical to …
