Cauliflower and Hummus

Like many of you, my husband and I have tried to adjust to a “stay at home” life. We haven’t left our home unless it’s to the grocery store and even then we limit our trips to way less than before the quarantine. In fact, recently Google Maps told me about my month of travel and the actual highlight (and only place I’d been) was the grocery store. Needless to say the cooking is a little different lately. We’ve always been big on cooking or baking at home instead of going out, but lately our meals are a bit repetitive …

Beans and Pasta Caesar Salad

It’s starting to feel like Spring with warmer temperatures and I’m craving salads. I still crave pizza and ice cream, but it’s all about moderation.  In the meantime, I’m going to take advantage of my salad obsession while it lasts.  I wanted a healthier Caesar salad, i.e. remove the buttery croutons (which is arguably the best part of a Caesar salad).  I replaced them with little pasta shells.  Pasta added to lettuce salad is surprisingly wonderful.  I don’t feel like I’m eating a “salad.”  Keep in mind that this is not a pasta salad though, it’s just got essence of …

Fajita Chicken Bake

Winner, winner, chicken dinner.  Sorry, I had to go there. This chicken and rice dish is very easy and quick to put together.  All you need to do is chop up a few veggies, throw everything into a baking dish, and pop it in the oven.  I love one pan recipes because it means that I don’t have to wash a lot of dishes.  It’s the little victories. Not only is this an easy one pan wonder, it tastes really good.  The chicken and veggies are full of fajita flavors.  Think of traditional chicken fajitas, but instead of tortillas there’s …

Spicy Sausage and Cheese Stuffed Zucchini

I’m really loving this idea of using zucchini strips like noodles. If you’ve never heard of zucchini strips, it’s when you use a mandolin or vegetable peeler on a zucchini and turn it into flat strips.  It’s awesome.  Perhaps I’m easily amused or maybe I missed out on the “zoodles” craze.  Either way, I want to make all the things with zucchini strips now.  Recently I made zucchini ravioli which was so delicious.  My husband liked it too but he felt it was lacking in meat.  While I do like meat, I’m completely content (and most often prefer) vegetarian dishes.  …

Swedish Meatball Pasta Bake

This is the kind of comfort food dish that you make on the weekend. Think Swedish meatballs meets a casserole and that’s what we’ve got going on here today. Nifty, right? I tend to prefer casseroles in the winter time. Maybe it’s because they tend to be heavier and ideal for cold nights. Which means if you’re counting calories then save this recipe for a day when calories don’t count (like the weekend or on vacation 😉 ). As a heads up, this recipe takes a bit of time to make, which is the real reason why I suggest making …
