Beans and Pasta Caesar Salad
It’s starting to feel like Spring with warmer temperatures and I’m craving salads. I still crave pizza and ice cream, but it’s all about moderation. In the meantime, I’m going to take advantage of my salad obsession while it lasts. I wanted a healthier Caesar salad, i.e. remove the buttery croutons (which is arguably the best part of a Caesar salad). I replaced them with little pasta shells. Fajita Chicken Bake
Winner, winner, chicken dinner. Sorry, I had to go there. This chicken and rice dish is very easy and quick to put together. All you need to do is chop up a few veggies, throw everything into a baking dish, and pop it in the oven. I love one pan recipes because it means that I don’t have to wash a lot of dishes. Spicy Sausage and Cheese Stuffed Zucchini
I’m really loving this idea of using zucchini strips like noodles. If you’ve never heard of zucchini strips, it’s when you use a mandolin or vegetable peeler on a zucchini and turn it into flat strips. It’s awesome. Swedish Meatball Pasta Bake
This is the kind of comfort food dish that you make on the weekend. Think Swedish meatballs meets a casserole and that’s what we’ve got going on here today. Nifty, right? I tend to prefer casseroles in the winter time. Maybe it’s because they tend to be heavier and ideal for cold nights.
