Cold Sesame Noodles

This is a meatless lunch and I’m loving it. If you’re familiar with me or my blog then you know that I live for easy lunches that I can make ahead of time to bring to work. I’ve noticed that I eat healthier when I prep my lunches on Sunday before the busy week. I’d bet that many of you feel the same way as me. So today I have a new favorite lunch. I saw this recipe on Instagram a few months ago and I couldn’t wait to try it. It had my name written all over it. I …

Chili… Again

Chili is the perfect food to be thinking about right now.  Chili is great for cold weather or for the big game.  Who’s up for some chili? I actually shared a chili recipe back in 2013.  Yikes, that was my first year blogging so I’ll be celebrating 6 years already!  Anyway, my husband and I make that chili recipe every winter and we love it.  However, every time we make it, we say that it should have a tad more liquid.  Apparently that didn’t bother us enough because we are only now finally adjusting the recipe to try to fix it.  It’s really …

Chicken Spaghetti Casserole

Holy cow, it’s September. If life has gotten more hectic (or you just live for easy meals 365 days a year like I do) then this post is a must read.  I initially made this meal for my sister and her family a couple of months ago.  I put it together in a disposable pan and froze it.  All she needed to do was to defrost it and pop it in the oven.  Before I froze it, my husband and I sneaked a bite (we had to make sure it wasn’t poisonous) and oh my it was so tasty.  My …

Corn, Tomato, and Avocado Pasta Salad

This is my kind of meal. I cannot tell you how obsessed I am with this pasta salad.  Well, I can try.  😉  Let’s start with the ingredients.  This salad is basically a bowl full of some of my favorite things on earth.  Pasta, avocado, cheese, tomatoes, basil… this is seriously heaven for me.  I could not stuff my face fast enough when I ate it.  (Although it probably did not help that it took me longer to photograph than I expected so I was starving by the time I could eat it.) I love this salad not just for …

BBQ Chicken Naan Pizza

Pizza for the win.  Even fake pizza. I created this fabulousness by combining a few of my recipes.  I love my margherita naan pizza because using naan makes it so quick and easy to whip up a pizza dinner.  Seriously, my husband and I made margherita naan pizza at least 7 times this year.  I also love my husband’s chicken garlic pizza creation.  It’s been a while since he’s made it because making the pizza dough takes a bit of time and more importantly some slightly annoying levels of planning, but it’s absolutely one of our favorite recipes. Lately, my favorite week night …
