Time for a bit of nostalga. This is one of those dishes that can feed a family on the cheap and doesn’t take much time to prepare. It’s perfect for a busy family on a budget. The recipe came from the grandmother of a friend of the family and was served in my husband’s house while he was growing up. As a fair warning, you have to like canned peas which can be described as an acquired taste for some. If you’d like to to make this into a slightly fancier version you could use frozen veggies or even fresh …

Chicken Chipotle Bowls
Soooo if you thought you’ve seen this post recently then you’d be right. We had a major issue with our server and all I can say is “thank goodness for backups and my husband.” It took a lot of work but my husband got my blog back up and running with some minor hiccups, which included losing my two most recent blog posts. Hey, in the grand scheme of things, I’ll take it. I don’t remember what I wrote when I posted this recipe a couple of weeks ago and to be honest I don’t want to try to recreate …
Chicken Shawarma Bowls
I am very into chicken with salads right now. Who am I? Hey, I like chicken, I’m just very picky about it. I think that’s actually to your advantage because that means I’m only sharing the best of the best chicken recipes with you. (I’m sure that my husband is giving me a funny face as he’s editing this. Only I could find a positive spin for being a finicky chicken eater.) Since it’s summer, I’m taking advantage of all of the fresh produce before it goes down hill in the colder months (which is typical for New England). I …
Summer Ratatouille
I took the classic ratatouille and turned it into a summer delight. A long time ago I made ratatouille over polenta. It was delicious and beautiful. However, to be honest I haven’t made it since because it is kind of a pain to make. For a while I’ve wanted to make a less fussy version of ratatouille because, let’s face it, who has that kind of time to meticulously layer squash. Don’t get me wrong, there is a time and place for plating a fancy pretty meal, but not for me in the summer time. I’d rather be out enjoying …
Sweet Potato and Black Bean Bowls
I can’t believe it’s almost July. You know that means? Christmas in July on the Hallmark channel. Oh yes, I went there. If you know me, then you know I’m obsessed with watching Christmas movies on the Hallmark channel. Any time of year that I can get them. I even have a bunch of them on DVD. They make me happy. 🙂 This meal also makes me happy. I’ve been on a kick with hearty vegetarian lunches lately and I’m adding this one to the rotation. The lime cilantro yogurt dressing is the star of this dish and what inspired …
