Banana Chocolate Chip Oaties

All you need is 5 ingredients and 25 minutes for these cookies. Ready, set, and go. These aren’t your usual cookies, well, not my usual cookies. There is no added sugar (not counting the chocolate chips), no flour, no eggs, and no added fat like butter or oil. So what’s in them? Bananas, oats, cinnamon, vanilla extract, and chocolate chips. I was interested in trying this recipe because they sounded “healthy.” I don’t use that term loosely anymore because my husband clued me into how a lot of people misuse the term by making things that are exactly as bad …

Zucchini and Pea Orzo Salad

Is anyone else in a seasonal confused state of mind like me? I’m craving all things Fall but I’m still enjoying summer foods. I’m watching Fall and Christmas movies on the Hallmark Channel. I’m seeing Halloween candy and decorations in the stores. Starbucks is already talking about the date PSLs will go on sale. I’ve got Fall inspiration photos on my social media feeds. Naturally, this means that I’m influenced so I’m starting to think about how I’ll decorate the house for Fall and what kinds of pumpkin and apple goodies to make. Fall is my favorite season so I …

Zucchini Chicken Enchiladas

What vegetables are in season in August? To name a few, tomatoes, melon, corn, and my favorite… zucchini. I’ve wanted to try these enchiladas since I found the recipe last year, but I missed my chance. Since then I’ve been patiently waiting for zucchini season. I wasn’t going to miss it again, and after making them I was not disappointed. If you look at the title of the post you can easily imagine what these are since it’s exactly what it sounds like. It’s an easy chicken enchilada filling wrapped up in slices of zucchini. The chicken enchilada filling is …

Peach Quinoa Salad

It’s weird to me that I’m sharing two recipes in a row that feature fruit in salads (watermelon caprese salad and today’s peach quinoa salad) because I don’t tend to care for having fruit in my salads. I guess that just goes to show you that anything is possible… or that these salads are really that good. Bottled salad dressing is obviously easier, but making your own at home isn’t really that much work and has the advantage of knowing exactly what’s in it. Actually, thinking about it, you also have an infinite variety of dressings you can make at …

Watermelon Caprese Salad

This is summer in a bowl. I love caprese. If you’re not familiar with it, it’s a mozzarella, tomato and basil salad. The combo is a classic and is so delicious. However, I’m giving it a little twist today and adding watermelon to the mix. Yup, watermelon, which is another favorite of mine to enjoy in the summer. The sweetness from the watermelon is a wonderful contrast to the savory mozzarella cheese and tomatoes. I have to say that it’s important it be fresh mozzarella for the right texture. If you want a little variety you could try strawberries either …
