Tiropita – Greek Cheese Pie

This is the easiest and quickest Greek recipe I’ve made so far. You know, for a Greek recipe. If you asked 10 people how to make cheese pie (or tiropita), I bet you’d get 10 different answers.  I’m sure most, if not all, would be delicious in their own way.  I’ve eaten of variety of them. Since I’m Greek, I suppose that’s to be expected. If you’ve never had it before or don’t know what it is, it’s a savory Greek cheese pie where the filling is a cheese mixture, mostly made of feta cheese. I had never made my …

Chicken Burrito Bowls with Avocado Salsa

If you’re looking for an easy and quick dinner idea then I’ve got your back. Let’s face it, we’re probably always looking for quick dinners. While I can never beat the time it takes to make a bowl of cereal (not that there is anything wrong with that), you can whip up this chicken dinner pretty quickly. And any leftovers taste great the next day, which makes for an even quicker meal (and may actual tie with the timing of a cereal dinner). The chicken and avocado salsa are the stars of this dish. Carrot Cake

Guys, I baked a cake! If you’ve been around Tina’s Chic Corner for a while then you know I’m not really into baking cakes. I suppose it’s because I find them intimidating to make. Did I over mix the batter? Is it done baking? How about now? Did I over bake it? My husband can attest to the countless questions that I ask. (Sorry, babe.) However, this carrot cake captured my attention last year so I convinced myself to put my insecurities aside and try it. And guess what? I failed. I’m not kidding. When I tried this recipe last …

Bougatsa – Greek Custard Pastries

A cup of Greek coffee and Greek sweets is always a good idea. If you’ve never heard of bougatsa before, it’s a sweet custard individually wrapped in phyllo dough. It’s very similar to my favorite Greek dessert, galaktoboureko, except you cover the bougatsa with powdered sugar not syrup and they are bite sized. As a friendly heads up, I think that these are a pain to make. You know that I like to keep it real for you guys. There is nothing difficult about this recipe, in fact it’s quite easy. However, I despise working with phyllo dough because it’s …

Quinoa Salad

What makes the perfect salad? My husband says it definitely doesn’t involve quinoa. Before I answer the question that everyone wants to know the answer to (yes, I’m being dramatic), I’d like to say that it feels good to be back to blogging. I took a few unintentional weeks off because life got in the way. Work was busy. For those of you who don’t know, I am a full time attorney at a corporation. I was feeling uninspired to find or create new recipes worth sharing here. Plus, I felt my usual winter time blues. Something had to give …
