Little Banana Bread

I’ve been in a food rut lately, but this little banana bread brought me out of it. By now I’m sure most of us have baked some kind of banana bread, but have you made a little itty bitty one? I could not resist trying it when I found this recipe. It’s so cute. I included a butter knife in the photos so you can get a sense of the scale of the actual size of it. To make this mini-treat requires a bit of tiny additional hardware. So you either need to own or buy a 5.5 x 3 …

Mini Pepper Nachos

If you are looking for a healthy appetizer recipe then I’ve got one for you. I love good old fashioned nachos, but sometimes I want something a little more on the healthy side. Skillet Potatoes

I love when I can take one basic recipe and turn it into a bunch of different dishes. These potatoes are as basic as it gets. There are no fancy long lists of ingredients here on purpose because sometimes I’m just not in the mood to deal with that. You know, it’s that feeling of “I want good food with no fuss.” We like to make at least 4 thighs and and store them in the fridge for leftovers. We prefer the chicken thighs with bone and skin but then remove the …

Greek Orzo Salad

If you throw some feta cheese and Kalamata olives into a dish, then you’ve got the beginnings of something Greek and delicious. If you’re not familiar with my blog then I’m here to tell you that I’m a huge fan of Greek cooking. (I am half Greek so it comes with the territory.) That means that I have a number of Greek salads and other savory and sweet recipes in my recipe box (i.e. recipe index). I love this Greek orzo salad for lunch. You’ve got some hearty orzo, a little protein from the chick peas, a little Greek flavor …
