This is the kind of dessert that people sneak bites of before it’s dessert time. True story. I don’t bake cakes often, especially multiple layer cakes. Maybe it’s because I dread handling two or more cakes that inevitably don’t look symmetrical and I can’t frost cakes to save my life. Or perhaps it’s because I don’t have many occasions that call for a cake and I don’t want to make a whole cake for just me and my husband. Let’s go with the latter reason. 😉 Now a one layer cake, that I can do. After all, it’s almost like …

Caprese Chicken and Quinoa
How is it July already?! It seems like just yesterday I was watching Christmas movies. Oh wait, that’s because I was. The Hallmark channel is celebrating Christmas in July with round-the-clock Christmas movies. I’m in heaven! I even told my husband that I wanted to bring up our 2 foot tall pre-lit Christmas tree for the month. I got vetoed. All this Christmas talk has me craving cookies now (although in fairness, when am I not craving cookies?). Unfortunately (or maybe fortunately, depending on how you look at it), I don’t have a cookie recipe for you today if that …
Raspberry Cheese Danish (Redux)
When I want to cook something for my dad I instantly go to breakfast and pastries because that’s his favorite. My dad says that he likes everything that I cook for him, even my chicken dinners. I’m not sure that I entirely believe him because he’s not a chicken fan. (Now you know where I get my chicken aversion from. 😉 ) Nevertheless, I’ll stick to pastries because I know it’s always a winner and I’m making a oldie but goodie today in his honor. If you’ve followed me for a long time then this danish will look familiar because …
Greek Roasted Chicken
Winner, winner, chicken dinner. (Sorry, I had to go there.) My Greek roasted chicken and potatoes dish is one of the recipes from my blog that I make the most. It’s easy to make, it comes out delicious every time, and it’s a great make-ahead meal to make for guests. I’ve taken the original tried and true recipe and made two minor changes to it. While the original recipe is still perfection (and I still make it that way when my husband and I entertain for a big crowd), but I wanted to make it into a smaller portion. Plus, …
Cookie Dough Stuffed Chocolate Sandwiches
These cookies are so fun! I’m not usually drawn to cookies that you don’t bake, but I simply had to make these when I saw them online. I love Oreo cookies and chocolate chip cookie dough so it sounded like a match made in heaven. It turns out I was right because they are so good. I think that this is the safest cookie dough to eat. There are no eggs in it, and I baked the all-purpose flour before I mixed it into the cookie dough. There is some controversy as to whether flour is safe to eat so …
