Snickerdoodles

If cookies were the nifty pictures on a calendar, the snickerdoodle would represent one of the Fall months for sure. I’ve been in a funk with recipe making lately and my husband told me that I was the happiest blogging about cookies.  He’s absolutely right.  So I made cookies. I’m all about cinnamon and other warm spices this time of the year and I instantly thought about snickerdoodles.  They are part sugar cookie, part cinnamon, and all delicious.  I’ve never made a snickerdoodle before.  I know, right?  With all the cookie recipes in my collection, you’d think this would have …

5 Lunch Meal Prep Recipes

Are you looking for healthy lunch ideas?  Here’s what I’ve made for lunch recently. 1. Hummus, Greek salad and Naan.  As the summer days are ending, I’m trying to enjoy the fresh veggies as much as possible.  Tomatoes, cucumbers and feta cheese is one of my favorite savory combos of all time.  I made hummus to add a little protein to my lunch.  Thankfully hummus can be enjoyed 365 days (and believe me, I do). 2. Pumpkin Spice and Everything Nice

Fall is absolutely my favorite time of the year.  I know I’ve said it a bazillion times.  There is something about the crisp air and falling leaves that makes me happy. Chicken Spaghetti Casserole

Holy cow, it’s September. If life has gotten more hectic (or you just live for easy meals 365 days a year like I do) then this post is a must read.  I initially made this meal for my sister and her family a couple of months ago.  I put it together in a disposable pan and froze it.  All she needed to do was to defrost it and pop it in the oven.  Before I froze it, my husband and I sneaked a bite (we had to make sure it wasn’t poisonous) and oh my it was so tasty.  My …

Corn, Tomato, and Avocado Pasta Salad

This is my kind of meal. I cannot tell you how obsessed I am with this pasta salad.  Well, I can try.  😉  Let’s start with the ingredients.  This salad is basically a bowl full of some of my favorite things on earth.  Pasta, avocado, cheese, tomatoes, basil… this is seriously heaven for me.  I could not stuff my face fast enough when I ate it.  (Although it probably did not help that it took me longer to photograph than I expected so I was starving by the time I could eat it.) I love this salad not just for …
