Tomatoes and Feta with Polenta

Never underestimate a dish built on the foundation of only tomatoes and cheese.  It works for a classic pizza, right? When I don’t have much food in the house and I don’t want to go to the grocery store I tend to get creative with what I do have.  I had tomatoes and feta cheese and not much else.  Truth be told, I could have been happy with these tomatoes, feta cheese, olive oil and herbs on top of some toast for a snack.  However, I remembered that I had some polenta hidden in the back of the cupboard.  Suddenly …

Avocado Toast with Eggs, Kale and Tomatoes

I could probably eat avocado toast every day and not get sick of it.  That’s saying a lot because I get bored of eating the same thing over and over. I think the trick is that I make different kinds of avocado toasts.  I even shared some of those recipes with you.  They’re pretty much all the same, avocado, toast, and the other stuff.  It’s really not rocket science.  Sometimes eggs, other times not.  It just depends on what you have and what you want to eat.  I’m excited about today’s version of avocado toast because it includes a little …

Berry Crisp

Which is better, a berry pie or a berry crisp? My parents came over for dinner on Saturday and I wanted to make a lovely summer dessert.  I could have made blueberry or triple berry pie , because pies are yummy, but I wanted something easier and quicker.  That’s where this berry crisp came in. Greek Avocado Salad

Guys, I’ve been totally slacking on posts lately (if you hadn’t noticed). I’ve mentioned a few times recently that I’ve been focused on my workouts.  I think I have a good routine going with those at this point.  Now I figure it’s time that I buckle down and focus on eating healthier on a more regular basis (i.e. not just on Mondays).  So many of my blog posts are about food, and in my attempts to be healthy mean that the recipes are a bit boring.  Some aren’t even “real” recipes at all, but rather a bit of a write up …

Chocolate Chip Cookies

What better way to celebrate Christmas in July but with cookies. The Hallmark channel is in full swing with showing their Christmas movies this week and you better believe that I’m watching as many of them as I can.  It’s not like I’ve seen them all at least 7 times each or anything.  😉  It’s definitely getting me in the mood for the holidays.  In fact, I almost bought marshmallows and hot cocoa.  I ended up not buying them because I figured one cup would satisfy the nostalgic craving and then I’d mindlessly consume the rest of the bag of …
