Coconut Chocolate Chip Bars

I’m celebrating Friday with chocolate and coconut (not that I really need a reason to have chocolate). These bars are little squares of cakey goodness.  But guess what?  There is no wheat flour going on here.  They are made with coconut “flour.”  They get their sweetness from the coconut flakes, chocolate chips and maple syrup instead of piles of sugar.  Crazy, right?  Well to me it sort of is because I’m used to baking with flour, butter, and sugar.  You know, all the fatty delicious food groups. Avocado Pasta

Avocado and toast.  Have you heard of this before? If you haven’t heard of the notorious avocado and toast then you’re getting two recipes from me today.  😉  You toast up some good bread, you add sliced avocado on top, and you season with salt and pepper.  It doesn’t sound impressive but I promise you that it’s a life changing meal.  You can go crazy and top it with feta cheese, or an egg, or bacon, or crushed red pepper flakes, or your favorite veggies, or really anything goes.  I find the simplest version to be the best.  I considered blogging …

Have you ever eaten at a restaurant by yourself?
