Pumpkin Cheesecake Muffins

Crumb topping, pumpkin cake, and cheesecake…  Need I say more?  Oh, and it all comes packaged in nifty muffin.  Enough said. I haven’t baked muffins in eons.  There was a period of time when I was baking muffins every weekend.  I think I realized somewhere along the way that a muffin is essentially a cupcake without icing.  Cupcakes aren’t exactly healthy, especially not for breakfast.  Although cupcakes are perfectly healthy for dessert because I figure it’s like a small piece of cake, at least the way I cut cake.  😉 I’ve been dying to bake these Pumpkin Chocolate Chip Cookies so I finally …

Spaghetti Squash With Chickpeas And Kale

I’ve been craving pizza lately.  So what else is new? Your eyes are not deceiving you.  There is no pizza going on here today.  Womp womp.  I ate so much food over Labor Day weekend so I thought I’d be really healthy this past weekend.  So I woke up Saturday morning and went to my kickboxing class and then I ate healthy all day, including this delicious spaghetti squash meal. Sunday was a different story.  I stayed in my pajamas all day and ate like crap.  I guess you win some and you lose some.   It’s a good thing that …

Pumpkin Chocolate Chip Cookies

These are THE softest and chewiest cookies that I’ve ever made… ever.  That’s saying a lot since I’ve made a bazillion cookies (give or take). Guys, if you make one pumpkin flavored dessert this Fall, this has to be it.  Pumpkin Pie excluded of course.  And pumpkin cheesecake, can’t forget that.  And pumpkin muffins…  Okay, just make pumpkin everything and make these too in the process. I brought these cookies to a family BBQ last weekend.  Does that sound weird to anyone?  Pumpkin… BBQ… that’s not how it normally goes.  Typically we bring pumpkin desserts to Thanksgiving or to a …

Lemon Bars

Why does a three day weekend seem to go by just as fast as a normal two day weekend? Perhaps time really does fly by when you’re having fun or maybe it flies by when you’re busy or maybe it flies by when you’re not at work.  (My husband points out that having fun may be defined as simply not being at work.)  I think Labor Day weekend should be a four day weekend from now on because then it might actually feel like a three day weekend.  😉 In between visiting our respective families, I did some baking this …

Sesame Soba Noodles and Vegetables

Hot days call for 15 minutes recipes because I don’t want to be slaving over a hot oven when it’s 90 degrees F out.  I’m pretty sure I’m not alone here. This past week has probably been the hottest that we’ve had all summer long.  Leave it to Mother Nature to wait until the last minute.  Meanwhile, we’re heading into the unofficial last weekend of the summer and I’m itching for Fall time.  That means come Tuesday I’ll be getting all my cozy sweaters ready, drinking pumpkin spice coffee, and lighting all my fall scented candles.  Eager much?  😉 Have you ever cooked soba …
