Tomorrow marks five months to Christmas. Crazy talk, right? I watched a week of Christmas movies on the Hallmark channel (their Christmas in July celebration). The stores are bringing out their Fall collections and the fashion bloggers are already showing off their Fall fashion trends. So I guess you could say that all that has put me in the mood for baking cookies, my typical Christmastime activity. Plus, I had to make cookies for my annual family trip to Lake George, NY. Sticky Buns win! T, what are you talking about and what does that have to do with this eggplant dish? I’ll explain. Bare with me for one minute as I digress from today’s recipe. My husband and I have been having a friendly debate as to whether cinnamon rolls are different from sticky buns and if one is better than the other. Summer, summer, summertime. This past weekend we spent some time with my family on our annual Lake George, NY trip. It was four fun days of food, pool, shopping, food, food, and more food. Needless to say, I have the need to detox, without actually doing a real detox program because I can’t last two hours on those. The next best thing to a detox (or in my opinion, THE best thing) is to turn to a healthy salad. Boy, my husband’s Cinnamon Rolls and Sticky Buns are sure hard to follow. The reality is that not every recipe will be as exciting as those. I mean, I gave them a 38 hat rating on a 5 hat scale!
