Parmesan Crusted Chicken

If you’re looking for a new and crowd pleasing chicken dinner then I’ve got you covered today. The key to this parmesan crusted chicken is two fold. First, don’t overcook the chicken. We use a Habor thermometer that is very similar to this one linked here. Second, the chicken breasts should be thin. Is that really necessary? Well, no. This recipe will work with normal size chicken breasts, but then you won’t get that perfect ratio of tender chicken to crispy coating. So if you want what you see here then you will need a tenderizer or kitchen mallet to pound …

Simple Chickpea Salad

Simple is the name of the game today. Speaking of games, I’m excited for the big football game this Sunday. I’m not rooting for a particular team this year but I love the fun food that goes along with the celebration. Although, this year the game falls on the day before Valentine’s Day. Spicy Butter Chicken

Guys, this chicken is ridiculously delicious. If you know me or you have been following me here on Tina’s Chic Corner for a while, then you know that I’m not the biggest fan of chicken. Creamy Cucumber Salad

Fresh and tasty salads can be hard to come by in the cold months, but I can almost always count on cucumbers. I was drawn to this cucumber salad because it reminds me of tzatziki – cucumber yogurt dip, which I love. You’ve got a lot of similar flavors, Greek yogurt, olive oil, lemon juice, dill, salt and pepper. However, there is no garlic here. So if you’re not a garlic fan (hi, mom), then this is the perfect alternative. You can enjoy this cucumber with a lot of foods, like pork chops and rice, or chicken and potatoes. You …

Beef Stew

We’re due to get a big snow storm this weekend. Welcome to New England in the winter. In anticipation of the snow days, I’m laying in all the cozy supplies. Warm blankets, cozy sweatpants, candles, new books, wood for the fireplace, and ingredients to cook up some comfort food, like this beef stew. This stew is so easy to make and delicious. We don’t make a lot of stews so I’m always amazed how easy they are. They may take some time to cook but that’s no big deal, especially when you have nothing but time on a snow day. …
