Who has leftover Easter candy? We have a boat load of pastel colored M&Ms.  I don’t know exactly how much a boat load is but it sounds like a lot.  Last week I wanted a normal size bag of M&Ms but the grocery store only had the ginormous size available.  The only downside with having leftover candy is that I want to sneak an M&M (or a few) whenever I pass by the bowl of them on the kitchen counter.  Is that really a downside?  😉 My husband and I spent Easter day with his family.  I like to give …

Happy Friday! Mediterranean Salad

This is my favorite salad (until I have a new favorite, of course 😉 ). I was craving Greek salad the other day.  Yes, craving a salad sounds weird, especially because I crave foods like bagels and pizza on a regular basis.  You better believe that I’m going to take advantage of this healthy craving while it lasts.  I love a traditional Greek salad made with tomatoes, cucumbers and feta cheese, but I wanted to kick it up a notch. I’m ready for Spring. I usually eat lettuce and veggie salads for lunch, but I haven’t been in the mood for them lately.  Maybe my mind is still in Winter mode even if my soul is desperate for Spring.  Instead I’ve had hot meals like pork egg roll in a bowl, vegetarian chili with rice, and egg rice stir fry.
