Hosting A Brunch

I love hosting a brunch because you can serve breakfast, lunch, or a combination of both. I prefer serving both plus a little something sweet. (No menu is complete without dessert of course!) Brown Rice With Sweet Potatoes and Avocado

I love avocados… Brown rice is pretty boring. Maybe that goes for rice in general, but I think that the brown persuasion is especially bland. So I decided to add some of my favorite ingredients to it, and boom, now I’ve got something exciting and delicious. Well, my husband says it’s not that exciting. It’s time to kick it up a notch. Spring has sprung officially, but thankfully it’s not warm enough in CT to wear shorts yet. We have no plans this weekend and I’m loving that. We could do anything… or nothing. Aren’t those weekends the best sometimes?
