Garlic Chicken Pizza

After a very busy few months, my husband and I finally found ourselves with no plans on a random Sunday.  Let’s make homemade pizza!  It’s the ultimate comfort food.  Snowy and cold weather = craving for comfort food.  Plus it’s the perfect way to slow down and spend quality time together.  We have a lot of fun in the kitchen and we get awesome pizza out of the deal. Not too shabby.     😉

The creation of this delicious garlic chicken pizza goes back a few years.  Many years ago my husband worked in New Haven (a town famous for their pizza) and would regularly enjoy garlic chicken pizza with his coworkers.  When we were going to make pizza of our own, memories of those pizzas were what inspired the toppings.  I’d never had anything like it, and as it turns out it was so yummy that now whenever we make pizzas for just the two of us, we make this combo.

Garlic Chicken Pizza Recipe
(Makes 2 personal sized pizzas)

Ingredients

  • 1 batch of Pizza Dough
  • 2 tablespoons olive oil, divided per the directions
  • 1 chicken breast
  • 5 cloves garlic, minced
  • salt (to taste)
  • pepper (to taste)
  • 1 cup marinara sauce (homemade or from the jar.  Today I used Classico sauce.)
  • 8 ounces mozzarella cheese, shredded

Directions

  1. Preheat the oven to 500 degrees F.
  2. Heat a skillet over Medium heat with 1 tablespoon of the olive oil.
  3. Slice the chicken breast into strips.
  4. Cook the chicken in the skillet, seasoning with the salt and pepper and then remove it to a plate.
  5. Turn the skillet down to low and add the remaining 1 tablespoon of olive oil and the minced garlic.
  6. Cook the minced garlic in the skillet as it cools.  This approach will help prevent burning the garlic.
  7. Flatten the pizza dough balls into roughly 12 inch pizzas on a baking sheet.  (They usually end up more rectangular than circular so they fit properly on the baking sheet.)
  8. Spread the marinara sauce onto the pizzas.
  9. Top each pizza with the shredded mozzarella cheese, cooked chicken, and garlic.
  10. Cook them in the preheated oven for about 12 to 14 minutes or until the cheese is fully melted and has a few darker looking spots on it.
  11. Slice and eat immediately.  (Please be careful, it will be VERY hot right out of the oven.)

 

Let’s pause here for a moment.  My husband and I are partial to this pizza combo, but if you would like to switch up the toppings then go for it!  Have fun and make the pizza that you love.     🙂

Perhaps the best part about making pizza at home is that you can make them exactly as you want them.  I like less sauce and more cheese.  My husband likes a lot of sauce and a lot of cheese.  If you want you can brush the crust with melted butter or olive oil and sprinkle it with anything from grated Parmesan to tasty herbs to sesame seeds.  To each their own.     😉

I’ve hosted many “make your own pizza” dinner parties.  Dave makes the dough ahead of time and I all I have to do is to buy a bunch of toppings.  It’s a super easy meal for me to pull together because the guests do most of the work for me.     🙂  These parties are always a blast and everyone leaves having eaten the meal they wanted!

Mmm, I sure do love that chewy homemade pizza crust!  Thanks for making it, babe.  Actually, now that I’m thinking about it, he basically made the whole thing.  I was more like the support crew in the kitchen.  Wait, actually sous-chef sounds more exciting.     🙂

My husband and I have what we call the “Three Toppings Rule”.  If you have more than three toppings on a pizza then it sort of loses its identity.  Meaning that it turns into a meal on top of bread.  Think about it for a minute.  If you have a “Taco Pizza” with like six toppings on it, what you end up with is a pizza that neither satisfies a craving for tacos nor a craving for pizza.  Sure, it probably tastes good, but isn’t food like pizza all about fixing a craving?

  5. I’m legit going to make this today! Dinner was supposed to be pulled pork enchiladas but I woke up this morning and the pork was burnt to a crisp in the slow-cooker…don’t ask me how! I think I may skip the dough though because I’m lazy and make flatbread pizzas instead on the tortillas I was going to use for the enchiladas. I’ll let you know how it goes!
