Blueberry Pie Yogurt Parfait

A parfait?  You may be thinking, “Been there.  Done that.”  I never thought I’d post a parfait recipe because there are a bazillion recipes out there (give or take).  Quite frankly, who really needs a recipe for piling fruit, yogurt, and granola together?  However, the key to this recipe is the blueberry filling and I simply had to share it with you.  So who wants blueberry pie for breakfast?  Well, sort of.

Blueberry Pie Yogurt Parfait Recipe
(About 4 servings)

Ingredients for Blueberry Filling:

  • 1 and 1/2 cups blueberries
  • 2 tablespoons white sugar
  • 1 and 1/2 teaspoons cornstarch
  • 1/4 teaspoon cinnamon

Ingredients for Parfait:

  • Blueberry Filling
  • 2 cups Greek yogurt
  • Almond Granola
  • sprinkling of extra blueberries
  • sprinkling of sliced almonds
  • drizzle of honey

Directions for the Blueberry Filling:

  1. In a medium sauce pan, on Medium heat, mix together the blueberries, sugar, cornstarch, and cinnamon.
  2. Cook until the mixture starts to thicken.  (For me, it was about 5 minutes.)
  3. Using a pastry blender or fork, mash the blueberries until you get the consistency you desire.  (The blueberries can be chunky or smaller, whatever you prefer.)
  4. Transfer the mixture to a bowl, and let it cool to room temperature.

Directions for Parfait:

  1. In a cup or a bowl, add as much of the blueberry filling as you like.
  2. Add a layer of about 1/2 cup of Greek yogurt.
  3. Sprinkle as much almond granola as you like.
  4. Top with a few blueberries, sliced almonds, and a drizzle of honey.

The key to this recipe is the blueberry “goo.”  I used my Blueberry Pie recipe as inspiration.  The touch of cinnamon in the filling really gives this parfait that pie essence (without the guilt of actually eating pie for breakfast).

Making a parfait is easy, folks.  I hesitate to really call this a recipe because you can pile the layers as you like.  I think the honey adds a lovely touch of sweetness but if you don’t like it then skip it.  I’m partial to my almond granola, but if you want to buy your favorite flavor from the store instead then go for it.  See how easy this is?     😉

My only goal here today was for you to get a nifty blueberry filling recipe.  (If you didn’t know how to make a yogurt parfait, then that’s a bonus!)  I thought it was best showcased in a parfait, but one could say it’s sort of like a jam so feel free to eat it like you would your favorite jam.  I also enjoyed it on top of graham crackers.  My husband put it on toast.

This parfait is so bodacious dudes!  Sorry, my husband and I just saw the new Teenage Mutant Ninja Turtles movie.  Of course we also had to watch the original Teenage Mutant Ninja Turtles movie.  The new movie was pretty good, although my husband says that the original is much better.  (It’s hard to compete with a childhood memory I think.)

  4. So this parfait is a “legal” way to eat blueberry pie for breakfast?! That’s a parfait I’m a fan of! It looks so good, Tina! And I love recipes like this – even if you’re writing instructions on making a yogurt parfait, I would have never thought to load it up with delicious looking blueberry filling.

  8. Sometimes I feel the same way about somoothie recipes – there are a million out there, and you don’t really need a recipe. But I love seeing what other people come up with and the flavors they use. So in conclusion – I’m glad you posted this parfait! And that blueberry pie filling is a great recipe to have on hand – it sounds delicious and so perfect for summer!
