10 Easy Avocado Toast Recipes

Bread and avocado.  Who knew that this combo could take over the world?  Well, I might be a little dramatic, but you do see avocado toast (or some variation of it) in restaurants and on social media.  That sort of counts, right?  😉

I’ve been wanting to post an avocado toast recipe because I love it.  That’s what I do, I share things that I love.  However, I can’t bring myself to write a “recipe” that states the obvious.  “To make avocado toast, toast some bread and top it with avocado.  Done.”  I like sharing simple recipes but this is a little different.  Maybe it’s just me.

Then it hit me the other day when I looked at my instagram feed.  First, I realized that I’ve posted a lot of avocado toast pictures (sorry!).  Second, I thought maybe if you don’t follow me on the various social media networks that you might be like to see these pictures, or more importantly get an idea a new way to enjoy avocado toast.  Fair warning.  These pictures were taken at all hours of the day and usually with my cell phone so they may not be ideal food blog photographs.  Also, these “recipes” are mad simple, may be a little repetitive (okay, a lot repetitive), and are usually made on a moment’s notice with whatever I had on hand so they are nothing fancy, but they sure are all tasty.  🙂

Here are 10 Easy Avocado Toast Recipes:

1.  Let’s start with the basic dish (in case by some chance you’ve never heard of avocado toast).  I toasted one slice of hearty bread from the bakery, topped it with sliced avocados and seasoned with salt and pepper.  It’s a classic.

2.  This one is a savory version created by adding some olives to the party.  I toasted two slices of a whole wheat bagel, added mashed avocado and a poach fried egg, sprinkled toasted sesame seeds, and seasoned it with salt and pepper.  Click here if you want to know how to make a poach fried egg.

3.  I actually blogged about this avocado egg in a bagel because I thought it was a tad more unique than the standard issue avocado toast.  Yes, technically I used a bagel and not toast, but carbs are carbs.  😉  Click here for the recipe.

4.  I toasted two slices of English muffin, added sliced avocado, a poach fried egg, and seasoned it with crushed red pepper flakes, salt and pepper.

5.  I toasted two slices of a plain bagel, added light cream cheese (aka Neufchatel), sliced avocado, and seasoned it with crushed red pepper flakes and salt.  The Neufchatel and avocado creates a wonderful creamy plus creamy equals extra creamy texture.

6.  I toasted two slices of whole wheat bread and topped it with mashed avocado and sliced tomatoes, and seasoned with salt and pepper.

7.  This one has slightly a Mediterranean flair.  I toasted one slice of a plain bagel and topped it with sliced avocado, scrambled eggs, feta cheese, and seasoned it with dill and salt.

8.  This one is sort of like an egg salad sandwich.  I spread mashed avocado on top of two slices of whole wheat bread (I didn’t toast the bread).  I cut a boiled egg in half and added a half to each slice of bread.  I added a touch of lime juice and sprinkled toasted sesame seeds, salt and pepper on top of each slice.  This rendition is one of my favorites right now.

9.  I toasted two slices of whole wheat English muffin and topped each slice with mashed avocado, sliced tomatoes, fresh basil, and seasoned it with salt and pepper.

10.  I made an avocado egg bagel sandwich.  Can you tell that I like adding eggs to the avocado toast party?  It’s a great source of protein and really helps the meal to stick to your ribs.  I toasted two slices of whole wheat bagel and sandwiched in between are slices of avocado and a poach fried egg, and then I seasoned it with crushed red pepper flakes, salt and pepper.
