Tzatziki – Cucumber Yogurt Dip

I’m revisiting an oldie but goodie recipe today. Tzatziki sauce is one of my favorite Greek recipes. It’s easy to make, it’s delicious, and it’s super versatile. If you’ve never had it before, it’s yogurt mixed with cucumbers, garlic, oil, and herbs. There are a few simple tips to creating an awesome tzatziki. First, make it ahead of time so that the flavor of the garlic and herbs marinate in the yogurt. Second, use Greek yogurt because it’s thicker than non-Greek yogurt and it makes for a better dip. Third, and I’m sorry for this one, go through the effort …

Spinach Pie Bean Quesadillas

Happy first day of Spring! I’m ecstatic that it’s getting warmer out and that the days are getting longer. To celebrate, I’m cooking up some Greek food because Greek cuisine is my favorite. I’m half Greek so I might be partial. 😉 Most people are familiar with spinach pie (spanakopita). It’s a pie made with buttery flaky layers on top and bottom and loaded with a spinach filling. Sweet and Spicy Cauliflower

If you’re looking for an idea appetizer idea that can also be for dinner then I’ve got the answer for you today. Those little nuggets look like they are chicken but they are not. Say hello to these cauliflower nuggets. They are coated with bread crumbs, panko crumbs, and flour and then baked in the oven. A few years ago I made a similar recipe and called them cauliflower poppers. Those poppers are only covered in panko crumbs. The more panko crumbs you use, the more crunchy they will be. Both recipes are great and I would recommend either of …

Spinach and Feta Turkey Meatballs

I haven’t made meatballs in ages. My husband was surprised to find me in the kitchen cooking meatballs last weekend.  It’s not my thing because I’m picky and not usually impressed with the final outcome.  (Also, I hate mixing meat with my hands.  Blech.)  However, I love feta cheese and spinach so when I saw this meatball recipe I thought this might be a winner and I was right.  I asked my husband if he liked them and he said “I could eat 12 of these right now.” Yup, these are a winner. These meatballs have a lot of great flavor …

Spinach Pie (Spanakopita)

It looks like celery juice is a food trend this year.  I’ll pass.  However, I do have an green food option for you if you’re into that sort of thing, except this option is delicious. I’ve had a lot of spinach pie.  Being Greek, that’s to be expected.  😉  If you asked 10 people to make it then I bet you’d get 10 different varieties.  I’m sure most, if not all, would be delicious in their own way.  When my husband and I visited Greece several years go we had a spinach pie in a spiral form at a truck …
