Tomato Chickpeas Over Dried Fig Infused Rice

I enjoy eating a variety of ethnic foods and I love cooking them in my kitchen because it’s a way for me to feel like I’m traveling around the world while remaining in the comfort of my own home.  If you’re not familiar with my blog, just take a peak at my recipe index and you’ll see what I mean.  I haven’t made many middle eastern recipes (although I have made the same Hummus a bazillion times) so I thought I’d venture out and try something new. This sweet and savory meal is warm and comforting, ideal for this time of year.  The …

Baked Chili

My husband and I are big fans of chili, especially The Perfect Chili recipe.  I could be partial since it’s a recipe that we created.     😉  That recipe makes a huge batch so it’s an awesome make-ahead meal that reheats wonderfully right out of the freezer.  Besides the obvious bowlful of chili, you can eat it in so many different ways, like on top of a hot dog or a baked potato or stirred into mac n’ cheese.  Which got me thinking…  what’s another way to enjoy chili? This baked chili has layers of pasta, delicious chili, sour cream, provolone, and mozzarella …

Chicken Enchiladas

I don’t know about you, but I’m always looking for new dinner recipes.  My friend Julie, from This Gal Cooks, recently made some amazing Green Sauce Chicken Enchiladas.  You’ve got to check it out if you haven’t already.  In fact, she has a ton of delicious recipe ideas so I bet you end up pinning (or marking) a whole bunch of recipes. I had every intention of making Julie’s enchilada recipe, but I couldn’t find green sauce in my grocery store.  I’m sure it was there and I simply missed it or was in the wrong aisle (I hate it when that happens).  …

Hearty Italian Sausage Soup

My beloved autumn days feel like they’re almost over when in fact winter doesn’t even begin for almost another two months.  Last week I dragged out the heating blanket for the couch and I turned on the heat for the first time.  (Well, technically my husband turned it on, while I sat on the couch covered in two blankets and still freezing my butt off.) It’s that time of year where I start to crave hot foods to help keep warm.  This hearty Italian sausage soup has a broth base and it’s loaded with hot Italian turkey sausage, orzo, roasted red peppers, …
