I took English muffins and turned them into little pizzas because… well, why not?
I love pizza. Let me count the ways I can eat thee… take out, homemade (aka traditional style crust), homemade with whole wheat crust, naan style, and skillet style (which is the most famous of them all on my blog… by far). You can really get creative with turning foods into pizzas (or things that resemble pizza ingredients). Sometimes it’s out of necessity because you’re a college student and all you have is sliced bread, sauce, and string cheese. Sometimes it’s about the fun to see what you can come up with. A couple of weeks ago I tried to turn a baked sweet potato into a “pizza.” It made a good lunch, but it was a little boring and it was an epic fail on presentation, so it never made it to the blog.
Now I can add English muffin pizzas to my pizza list. Chicken fingers… pizza fingers… do you get it? When you slice the English muffin pizzas you get skinny bite sized pieces, just like chicken fingers, sort of. If you totally get me then I love you. If you think it doesn’t make sense then you agree with my husband. 😉
Of course you can top your mini rounds with whatever pizza toppings you love. These are kid friendly (for assembly too!) and they work perfectly as appetizers because even if you ate a whole thing they really aren’t that much food.

Pizza Fingers Recipe
(2 servings)
Ingredients:
- 2 English muffins
- 3 tablespoons pizza sauce
- pinch of garlic powder
- pinch of oregano
- 1/2 cup shredded mozzarella cheese
- (optional) toppings that you would use on a pizza. I used miniature sized pepperoni.
- sprinkling of grated parmesan cheese
Directions:
- Preheat the oven to 400 degrees F.
- Cut the English muffins in half and place the insides face up.
- For each slice of English muffin:
- Spread the pizza sauce on top.
- Season with garlic powder and oregano.
- Add the shredded mozzarella cheese.
- Add the mini pepperoni.
- Cook them in the preheated oven for about 10 to 12 minutes or until the cheese is melted to your liking.
- Sprinkle grated parmesan cheese on top.
- Slice the pizza rounds into four pieces. (Or eat them as mini round pizzas!)
Note: It should go without saying, but the amounts of toppings are your call because there’s no wrong way to make a pizza. Also, if you’re making this for kids feel free to skip the seasonings because… well, because they’re kids and the simpler the better.
