Crumb Bottom Lemon Cake

I’m a little obsessed with crumb cakes.  I’ve always loved them, but I think the obsession started after I made (what I’m calling) the Perfect Crumb Cake last year.  Ever since baking that NY style crumb cake, I constantly think about which cakes I can turn into a crumb fiesta.  Take Exhibit A Chocolate Crumb Cake and Exhibit B Crumb Carrot Cake.  (That’s the attorney coming out.)  I thought it was high time for a summery crumb cake and what better way to celebrate the flavors of summer but with lemon flavored crumb confection.  Have you noticed something different about this crumb cake?  The big crumbs are on …

Poppy Seed Coffee Cake

Operas and cows.  What?!  I’m sure those are two words you never thought you’d see in a sentence, but I have your attention don’t I?     😉  Last weekend my husband and I stayed with family in Vermont and I brought a huge basket of baked goodies to thank them, including this tasty poppy seed coffee cake. This breakfast cake is a delicious vanilla based cake loaded with sweet pockets of poppy seed filling and topped with a streusel. Poppy Seed Coffee Cake Recipe (About 9 servings) Ingredients for Topping: 1/4 cup plus 2 tablespoons all-purpose flour 1/4 cup …

Crumb Carrot Cake

As many of you may know, I’m half Greek and half Italian, and I was baptized Greek Orthodox.  Sometimes the Eastern Orthodox Easter falls on a different day than what my family calls the “American Easter.”  Do you know how confusing that was for me as a kid?  “Mom, why does the Easter bunny come at a different time for me?”  I actually don’t remember how she used to answer that. My husband isn’t Greek so it’s great when the Easters (yes, it’s weird to make that plural for me too) fall on different days because we can just visit both …

Zucchini Spice Bars With Spice Frosting

I haven’t baked with zucchini in years so I had a random desire to fix that.  Sometimes zucchini goodies can come out bland, but not these bars.  They are insanely delicious!  In fact, I brought them to my niece’s 1st birthday party, but secretly I didn’t want to share them. These zucchini bars are infused with traditional autumnal spices and covered with a sweet spicy frosting.  Picture an amazing carrot cake, and you really aren’t far off.  Yum! Zucchini Spice Bars With Spice Frosting Recipe (Makes 16 bars) Ingredients for Zucchini Spice Bars: 1 zucchini (equivalent to approximately 1 cup) 2/3 cup dark …

Pound Cake

I’m taking it back to basics today.  You would think that with all the baking I do I would have a pound cake recipe stashed away, but I don’t.  However, for many years my husband has raved about his step mom’s pound cake.  Of course I had to seek out her recipe and find out what all the hype was about.  (Plus I enjoy baking goodies that my husband loves.)  I was not disappointed.  This is the best pound cake I’ve ever had! Pound Cake Recipe (Makes 12 to 16 servings) Ingredients: 4 cups all-purpose flour 2 teaspoons baking powder 1 pound (equivalent …
