Another day, another salad. I could eat the same thing for breakfast straight for two months and not get bored of it. I usually alternate between yogurt with fruit and oatmeal with fruit. I could also eat the same snack for days on end and that would be just fine. Lately, I’m loving Skinny Pop popcorn as my snack of choice. On the other hand, lunches are a totally different beast. Lately I feel pretty lucky if I eat my lunch without being sick of it by the time I’m done. I’m weird, I know. Salads tend to be my deal …

Spinach Pie (Spanakopita) for Two
I think this will be my favorite recipe of 2018. I know it’s probably too early in the year to say that I have a favorite recipe, but I really love this spanakopita (aka spinach pie). Let’s just say that I’ve set a high standard for all recipes that follow this one. Spanakopita is usually made in a big pan to serve a lot of people. If you’re my Yiayia (Greek grandma), then you make it in a very big pan. You know, because Greeks like to make enough food to feed an army no matter how many people are …
Individual Upside Down Ziti
This is one of the coolest meals I’ve ever made. I saw this idea on Instagram months ago and I’ve been dying to try my own version of it. Picture a traditional baked ziti, except here the ingredients are stacked in reverse order and you place a serving plate upside down over a ramekin and turn the plate and ramekin over. Presto change-o, you’ve got an right-side up ziti. I’m sure you’ve all seen an idea and tried it, only to see that it did not come out like the picture, whether it be a recipe or a craft. Well, I was skeptical that the noodles would …
Chickpea and Broccoli Rice
My social media feeds are full of Thanksgiving food pictures and I’m loving that. I don’t think I can get tired of seeing pictures of all the pies. Mmm pies. Plus, I think it’s kind of fun to see what people make for their families, whether it be a rendition of a classic dish or something non-traditional, like tacos. Obviously today’s post has nothing to do with Thanksgiving foods. If you’re like me then I figure you might like an idea of what to eat on the other 364 days of the year. 😉 This meal is a good example …
Avocado Egg Salad
Mayonnaise and I have a strange relationship. Sometimes I’m okay with it, other times it weirds me out completely and I don’t even want to open the jar. I’ll eat mayo in a salad or on a sandwich if there’s not a lot of it and if it looks appetizing. Even better if I don’t know it’s even in there, or at least didn’t have to be the one to apply it. When I do decide it’s a worthy meal additive, I anticipate that I’ll only eat a few bits and skip the rest on my plate but then I proceed …
