Zucchini Ravioli

I never thought that I’d really enjoy an Italian meal that’s missing pasta.  This zucchini ravioli is amazing. The zucchini  is the “ravioli” part of this recipe.  You use a vegetable peeler to slice thin wide strips (think of lasagna noodles).  Then you fill the zucchini slices with a ricotta cheese mixture and it ends up looking like a ravioli.  Nifty, right?  I’m a girl who loves pasta, and I thought I’d miss it, but I don’t.  Maybe it’s because you still get a whole lot of cheese and let’s face it, cheese makes everything better. Especially Italian dishes. My …

M&M Fudgy Brownies

Mmm brownies. If you’re new to my blog, then please meet my tried and true and best ever fudgy brownies.  I shared the recipe for the basic fudgy brownies back in 2013 and it’s on my short list of best ever recipes.  If you’re not new around here and have heard about them, then hang on tight, I’ve got a fun new twist on them today. I’ve been making the original fudgy brownie recipe for the past 15 years.  I don’t even remember how many times I’ve made them (that many).  I’ve been obsessed with them since the first time …

Black Bean Sweet Potato Enchiladas

I need to make enchiladas more often because they sure are delicious. Making enchiladas is kind of a task because it usually requires a lot of ingredients, steps and time. I won’t lie, that is the case with these enchiladas, but it’s SO worth the effort. If you see feta cheese in the photos or recipe and think “in a Mexican dish?” then you’re not alone. My husband and I thought the same, but I’m telling you, try it. It adds a touch of tang and if you think about it, is actually pretty similar to some Mexican cheeses like …

Summer Salad with Parmesan Vinaigrette

I can’t believe how much I love this salad.  Let’s be real, salads usually don’t have the wow factor that something like cookies or pies have (at least not for me).  But there is something about this one that makes it stand out against most salads.  You can even ask my husband, who was a witness to me “mmm” after almost every bite. Perhaps the key to this salad’s awesomeness is that it’s loaded with bacon and Parmesan cheese.  I mean, hello, bacon plus cheese seems to equal heaven, even on a salad. 😉 Maybe it’s really all about the …

Crustless Zucchini Pie

For the record, my husband says that this is not a pie because it doesn’t have a crust.  Pies must have a crust. This is sort of like a quiche.  However, quiches are mostly made of eggs and this “pie” only has two eggs in it.  I’ve made a variety of quiches and this one is lighter than any others. Call this whatever you like.  I’ve been calling it “the zucchini thing.” It’s a technical term.  Hey, whatever works, right?  My husband knows what I’m talking about and he doesn’t get to complain about me calling it a pie. I’ve …
