Beef and Broccoli Stir Fry

It doesn’t happen often, but I’ve got a beef recipe for all of you today. I like to eat beef but I don’t cook it often (or at all) because I don’t like touching or even looking at raw meat.  Plus, I never know how to determine when the beef is done cooking.  I don’t want to eat it raw and I don’t want to serve shoe leather either.   At the end of the day I simply avoid these struggles and stick to vegetarian meals because there is no guess work there for me.  It’s very hard to overcook things …

Spinach Pie (Spanakopita) for Two

I think this will be my favorite recipe of 2018. I know it’s probably too early in the year to say that I have a favorite recipe, but I really love this spanakopita (aka spinach pie).  Let’s just say that I’ve set a high standard for all recipes that follow this one. Spanakopita is usually made in a big pan to serve a lot of people.  If you’re my Yiayia (Greek grandma), then you make it in a very big pan.  You know, because Greeks like to make enough food to feed an army no matter how many people are …

Berry Kiwi Smoothie

Happy New Year! I’m back to my normal eating habits, which means that my holiday cookie diet is over.  It’s a shame because a cookie diet is the only diet that I seem to be able to stick with.   😉  I could never give up sweets because I love them so much, so I’m all about moderation.  I try to eat healthy during the week and splurge a little on the weekends. Smoothies are one of my go-to healthy meals.  I’ve shared a variety of them with you on my blog and now I’m adding this new pretty one to the list.  …

Individual Upside Down Ziti

This is one of the coolest meals I’ve ever made. I saw this idea on Instagram months ago and I’ve been dying to try my own version of it.  Picture a traditional baked ziti, except here the ingredients are stacked in reverse order and you place a serving plate upside down over a ramekin and turn the plate and ramekin over.  Presto change-o, you’ve got an right-side up ziti. I’m sure you’ve all seen an idea and tried it, only to see that it did not come out like the picture, whether it be a recipe or a craft.  Well, I was skeptical that the noodles would …

Gingerbread Man Cookies

I love holiday traditions. There is something about the holidays that brings out so many family traditions.  I love to reminisce with my family about some of the traditions that we had when I was a kid.  Just the other day I was talking to my parents about how we always started Christmas morning.  My three sisters and I would sit on the stairs waiting for my dad to give the okay that we could come into the room with all the presents.  Every single year he’d say “Sorry girls, it looks like Santa didn’t come.”  Then we’d have some …
