I have never made a no-bake cheesecake before. Boy, I was missing out. You know what’s great about a cheesecake that doesn’t require actually baking it? Everything. You don’t need to turn on the oven (which is especially a good thing on hot days). You don’t have to wonder if you overcooked it or undercooked it. Guys, would you believe that these are the first lemon cookies that I’ve baked? I don’t count the lemon bars (because they’re “bar cookies”). I’m not drawn to lemon desserts, even though I do enjoy them, so I guess they’re just not on my mind.
