Chicken Kale Pasta

I woke up this morning thinking that it was Thursday.  What a cruel world it was when I realized that it was only Wednesday. I should probably be enjoying these last few hot days of summer instead of wishing them away.  Maybe it’s a bit too hot for me so I’d rather seek refuge in my air conditioned home.  After all I’m safe there.  It’s a place where I can be on the couch and cuddled under a light blanket.  Wow, that makes me sound like a lazy schmuck.  Don’t judge me.  😉 Anyway, hot days call for light meals …

Tropical Banana Smoothie In A Bowl

Alright Monday, let’s do this thing. I haven’t had a smoothie in a while.  Remember when I was on a smoothie kick and I shared several smoothie recipes with you in a short period of time?  At that time I probably should have temporarily rebranded Tina’s Chic Corner to be Tina’s Smoothie Corner.  It’s only fair.  My husband fake rebrands his Bread Corner as often as the mood suits him.  🙂 I’m bringing smoothies back.  I should have taken advantage of the calorie free weekend.  You know, because calories don’t count on the weekends.  Instead, I decided to eat a …

Stuff I’m Into

I had every intention of sharing a recipe with you today, but let’s just say things didn’t work out as I had planned this past weekend.  I had more recipe failures than one should be allowed to experience in one weekend.  I’ll take it as a learning experience. #1  Do NOT trust your memory.  Even if you think you have an ingredient at home, pick it up anyway.  A backup is never a waste.  I live 15 minutes away from the nearest grocery store and on principle I refused to make the trip for 1 stinking can of diced tomatoes. #2  Lightened homemade ice …

Cold Sweet Potato Salad

How many times have you said to yourself, “Why didn’t I think of that?” That’s what I said to myself when I saw this recipe.  Duh… turn a classic potato salad into a sweet potato salad!  Please tell me that I’m not the last person on Earth who knew about this.  Please… The sweet potatoes are coated in a simple oil and vinegar dressing.  I love that there is no mayo in this salad, unlike many other cold salads that you notoriously see this time of the year.  I’ll eat potato salad covered in mayonnaise and even enjoy it, but I’m really …

Poach Fried Eggs

This is my husband’s magical way of making eggs so now I hand you over to “Dave’s Egg Corner”… This isn’t an especially magical technique if we’re being honest.  It’s barely even a “recipe” since you’re really just making eggs.  The thing is that like so many of my recipes this is a technique driven by simplicity. I don’t like trying to flip fried eggs over because about 50% of the time I end up breaking the yolks.  I don’t like making poached eggs because they tend to be watery and weird.  I don’t like how scrambled eggs require stirring …
