Peanut Butter And Raspberry Mousse Shots

Have you ever felt excited all day in anticipation for dessert?  Anyone?  Please tell me that I’m not the only one.  I blame this mousse dessert.  I made it the other day and I fell in love with it the moment it hit my lips.  Yes, you can fall in love with food!  Simply put, it’s crazy delicious.  Miraculously, I managed to not eat it all in one day which meant the leftovers drove me bonkers for days!  It was all I could think about.  Yes, they are that good.

This peanut butter and raspberry mousse combo is like a peanut butter and jelly sandwich in an adorable shot glass.

Peanut Butter And Raspberry Mousse Shots Recipe
(About 5 servings)

Ingredients:

  • 4 ounces of 1/3 less fat cream cheese (also known as Neufchatel cheese), divided per the directions
  • 1/2 cup powdered sugar, divided per the directions
  • 1/4 cup creamy peanut butter
  • 3/4 cup fresh raspberries
  • 2 pinches of salt
  • 3 cups Cool Whip Lite, divided per the directions (plus additional for topping, optional)

Directions for the Peanut Butter Mousse:

  1. In a medium bowl, using an electric mixer, beat together 2 ounces of the Neufchatel, 1/4 cup powdered sugar, peanut butter, and a pinch of salt until smooth.
  2. Add in 1 and 1/2 cups of the cool whip and beat until just combined.

Directions for the Raspberry Mousse:

  1. In a blender, blend the raspberries until they are the consistency of a puree.  You should get about 1/4 cup of puree.
  2. In a medium bowl, using an electric mixer, beat together 2 ounces of the Neufchatel, 1/4 cup powdered sugar, raspberry puree, and a pinch of salt until smooth.
  3. Add in 1 and 1/2 cups of the cool whip and beat until just combined.

Directions for Making the Shots:

  1. Layer some of each flavored mousse into the shot glass, alternating flavors as you fill it.  Top with a dollop of plain cool whip.

 

You can “whip” up this mousse dessert in a matter of minutes!  And no oven is required!!  I’m just getting started on the countless reasons why this has now become one of my favorite desserts.     🙂

Cooking tip:  Use room temperature cream cheese when making a no-bake mousse.  It’s easier to mix it into the other ingredients and it will make for a smoother mousse.

The peanut butter mousse is a little more dense than the standard issue mousse.  You know, because peanut butter is thick and heavy on its own.  This is what it looks like before adding the cool whip.

The raspberry mousse is very light and fluffy.  You can already see the difference in consistency as compared to the peanut butter mixture.  Again, this is before adding in the cool whip.

I had a vision…  Layers of beautiful mousse in an adorable shot glass.  Are you ready to be blown away?  If you’re drooling then I know I’ve done good.     😉  Heck, even I’m drooling as I write this up.

The peanut butter mousse is pure heaven, especially for a peanut butter lover like myself.  The gorgeous pink raspberry mousse is absolutely delightful.  You can eat them each on their own and they would be quite delightful.

When I mentioned making peanut butter mousse to my husband he said “Can you make two flavors instead?  Make the other one raspberry so that when you combine them it will be like a peanut butter and jelly sammich.  You know, but without the bread.”  PB&J is one of the best flavor duos in the world so I figured I couldn’t go wrong!  (And yes, he said “sammich”.     🙂 )

I am truly impressed that only 6 ingredients can turn out these elegant and tasty treats.

For those of us who are impatient or in a rush, you can eat this right after you’ve prepared it.  I’m loving that.  Guess what?  They are also a great dessert that you can make ahead of time to serve at any time in the next few days.  How awesome is that?!  Yes, the leftovers that I dreamt about all day long lived up to my expectations and were just as enjoyable on day three as they were on day one.

I’m going to say that peanut butter and raspberry is the best mousse flavor combo going.  I would however love to experiment with other potential flavors.  In fact, I’ve already been brainstorming with my husband and these are some of the crazy combos we’ve come up with. Blueberry and lemon.  Strawberry, blueberry, and vanilla.  Lemon and basil.  Nutella and peanut butter.  Mint and chocolate.  We went on like this for some time, but I think you get the idea.
