Egg In A Bread Sandwich

Last weekend, I had a craving for an egg in a bread.  Do you know what that is?

An egg in a bread is exactly what it sounds like, a piece of bread with an egg cooked in the middle of it.  It’s most commonly known as egg in a basket, but it goes by many other names.  My mom called it “egg in a bread” so that’s what I still call it today.

Is an egg in a bread just like toast and fried eggs?  Not at all.  The bread slices are sort of fried in butter, which is completely different than putting a pad of butter on toast.  Think of the bread slices on a grilled cheese sandwich.  Mmm.  (Remember my motto is that weekend breakfast calories don’t count.  😉 )

I could have simply made an egg in a bread, but the food blogger in me wanted something more… fancy, for a lack of a better word.  (My husband says “complicated” but we’ll go with fancy.)  So I turned it into a sandwich.  I highly recommend eating this with a fork and knife.  Can I still call it a sandwich if that’s the case?  (My husband says of course it can.  After all, even open-faced sandwiches are still sandwiches.)  It looks like a sandwich so let’s just call it one.  😉  If you like to get your fingers messy and wear half of the meal, then of course ignore my recommendation and skip the utensils.  I informed you thusly.  😉

A sandwich has to have stuff in it and you can really make this sandwich into whatever you want.  I added cheese, which gets all gooey and melty, and I added bacon, which is sort of a requirement to complete a breakfast sandwich because … hello, it’s bacon.

You can swap the bacon for sausage.  (My husband would.)  You can turn this into a vegetarian delight and add some avocado or cooked veggies.  Heck, you can go crazy and add hash browns or even make a double decker!  I think it would be fun to get the kids involved to see what creations they come up with.

If you’ve made eggs in a bread before then you know that the leftover round is the best part.  Well, it is in our house.  🙂

Egg In A Bread Sandwich Recipe 
(1 serving)

Ingredients:

  • about 1 tablespoon of butter
  • 2 slices of bread
  • 1 large egg
  • salt and pepper, to taste
  • toppings of your choice (I used bacon and provolone cheese.)

Directions:

  1. In a pan, on Medium heat, heat 1/2 tablespoon of the butter.
  2. Take a small cup and press the rim of the cup into 1 slice of bread to cut out a circle of bread.  Remove that circle of bread.  This will be the top slice of your sandwich.
  3. Place the top slice of bread, the round piece of bread (aka the cut-out), and the bottom slice of bread (aka the one without a hole in it) into the pan and cook until it turns a golden brown.
  4. Add the remaining 1/2 tablespoon of butter.
  5. Flip all 3 of the bread pieces over and reduce the heat a little bit.
  6. Immediately add the egg to the bread slice with the hole in it and cook it.  Pretend you are cooking a fried egg so cook it as well done as you like your fried eggs.
  7. Season the egg with salt and pepper.
  8. Once the bottom slice of bread and round piece of bread are a golden brown on the second side, remove them from the pan.
  9. Once the egg looks like it’s almost done cooking, turn the heat off, and flip it one last time.  Cook for about 1 minute.
  10. To prepare the sandwich:
    1. Place the bottom slice of bread onto a plate.
    2. Add your toppings / sandwich fillings.
    3. Place the egg in the bread slice on top.
    4. Enjoy!

    I’ve always called in “eggs in a hole”.. lol, love how depending on where you are from the name of a dish can differ. Of all the times I’ve made it, I never thought to turn it into a sammie! Your a genius! And I concur, by the way… the best part is the left over round 🙂
