Pumpkin Cheesecake (Redux)

There are only three reasons why I would post a recipe more than once here. One, I’ve modified the ingredients or the directions. Two, it’s something that is worthy of being showcased more than once. Three, my pictures of it sort of sucked. This pumpkin cheesecake fits the first two criteria, so you’re getting a redux. 🙂 I first shared this recipe back in 2017. My husband found it at least 14 years ago and we’ve been making it ever since. We’ve never tried any other pumpkin cheesecake recipe because this one is pure perfection. It tastes amazing. Baked Chocolate Chip Oatmeal

I kind of feel like I’m going back to school.  I saw the school buses this morning as kids return to school. I instantly felt like I was in school and got that sick feeling in my stomach even though I’ve been out of school for years. Does that happen to you? No-bake Cheesecake

I have never made a no-bake cheesecake before. Boy, I was missing out. You know what’s great about a cheesecake that doesn’t require actually baking it? Everything. You don’t need to turn on the oven (which is especially a good thing on hot days). You don’t have to wonder if you overcooked it or undercooked it. You don’t have to be annoyed about cracks on the top of the cheesecake. A no-bake cheesecake is not a lot of fuss and is just pretty awesome. This no-bake cheesecake tastes like a traditional baked cheesecake. The graham cracker crust is basically the …

Rice Pudding (Rizogalo)

This rice pudding is life changing. I shared a different recipe for rice pudding in 2020, a recipe that I made a few times and loved. My husband was not a fan of that recipe though. He said that the rice was too firm and the pudding texture was off. That’s one opinion versus the many complimentary ones so I just took it that he wasn’t a fan. To each their own. I couldn’t shake my husband’s comment so when I found this recipe for rice pudding, I knew that I needed to try it. I wanted to compare it …

Mini Burnt Basque Cheesecake

Have you heard of a burnt Basque cheesecake? A burnt Basque cheesecake is a type of cheesecake that was created in Spain. Think of it as part cheesecake and part crème Brule. Sounds interesting, right? It’s supposed to be burnt on top (hence the name). When I first heard about it I have to admit that I thought it sounded weird and I wasn’t really interested in trying it. However, I found this recipe for a mini version and after loving Lifestyle of a Foodie’s mini cheesecake and mini chocolate cheesecake I knew I had to try it. So what’s …
