Chicken And Rice Enchilada Casserole

Mexican food.  Enchiladas.  Easy casserole. My husband and I are big fans of Mexican food so I tend to cook it often.  Even if I only have rice, beans, and a jar of salsa handy, I can always whip up something quick that vaguely imitates Mexican food.  It’s not fancy by any means, but it works for those days when we have a craving but I’m feeling lazy in the kitchen. You know what’s great about this enchilada casserole?  (Besides everything.)  You don’t have to make the enchilada sauce and you don’t have to roll tortillas.  Don’t get me wrong, there is a …

Stuffed Zucchini

I’m so excited to share this zucchini dish with you that I can hardly stand it! Fair warning, you do need a quite a few pots and a bit of time for this recipe (this is definitely not a one pot wonder), but it is SO worth it.  Start with scooping out your zucchini.  I used a grapefruit spoon because the serrated edges made scooping really easy, but really any spoon will work.  (Note that I placed the zucchini in the baking dish just for show.  You’ll see from the rest of the photos that I had to remove them.) Meatballs, meatballs, meatballs.  Can you say that three times fast?     😉  My grandmother’s Italian meatballs were the best.   I’ve not been able to recreate them since she’s passed away and I’m pretty sure I won’t find her exact recipe so I’ve been on a quest to find the “perfect” recipe. I saw this tasty looking recipe on good old Pinterest.  These meatballs are not the typical Italian ones, but I thought I’d give it a try.  After all, there are lots of a fantastic meatball recipes out there and they aren’t all Italian.  These meatballs are seasoned with warm spices of …

One Pot Black Beans And Sausage

We’ve had cool temperatures this past week, especially for the middle of August here in Connecticut.  That’s especially good since this week our air conditioner died.  All this cool weather with open windows at night and fans all over the house got me thinking of my favorite time of the year.  Autumn.  I love the weather and the food that we notoriously eat that time of year, like apple pie and all the things you can make with pumpkin.  I even made some pumpkin bread this past weekend (coming soon to a blog near you).  Some might say that means that I’m a …
