Paloma…  Isn’t that a fun word to say?  Or maybe it’s just me. One Pot Mexican Stroganoff

Hectic days call for quick dinners and this one is speedy and tasty all at once. So what’s the deal-e-o with this casserole type meal?  Well, it’s part Mexican and part stroganoff, sort of.  It’s got a Mexican flair from the lovely enchilada sauce.  It’s not by any means a traditional stroganoff, but it has elements of it here, like the pasta, meat, mushrooms, and creamy sauce. No-Bake Cookies and Cream Bars

Oreos and marshmallows.  These are two of my favorite things on earth.  Now imagine making a no-bake bar that combines them together… it’s a reality. I’m a bit of a snob when it comes to marshmallows.  Marshmallows come in three delicious sizes.  Usually called miniature, original, and jumbo (depending on your brand).  I only like the Kraft Jet-Puffed miniature sized ones.  My husband isn’t especially picky and likes all the sizes, but only the mini ones in cocoa.  The jumbo marshmallows are awesome because of their sheer ginormous size, but they’re a bit too sticky for my taste.  Hmm…  By that I …

Baked Parmesan Zucchini Fries

I’ve made baked french fries.  I’ve made baked zucchini chips.  What do you get when you combine them together?  These amazing baked parmesan zucchini fries. Sure, you could enjoy these zucchini sticks as is or perhaps with some dip of some sort.  Why not dress them up with some panko crumbs?  I’ve used panko to coat chicken, cauliflower, onions, and zucchini (in 2 different ways now) and I’m convinced everything tastes better if it’s covered in panko.  Crunch-tacular! Tropical Smoothie

I’m obsessed with pineapples… and smoothies. I’m sure you can relate to being into a certain food.  What’s your latest food obsession?  Easter candy, perhaps?  You know who you are.  😉  That’s even more reason to hop on the smoothie bandwagon if you haven’t already.
